"PRODUTO DE LEITE FERMENTADO, PROCESSO PARA A PREPARAçãO DE UM PRODUTO DE LEITE FERMENTADO E USO DA LINHAGEM CNRZ 244 DE LACTOBACILLUS HELVETICUS". A presente invenção refere-se a um produto de leite fermentado que compreende uma quantidade de tripeptídeos VPP e/ou IPP expressos como concentração de IPP equivalente de 145 gM ou mais compreendendo 40 a 600 mmol/kg de K¬ +¬ e/ou 30 a 400 mmol/kg de Ca¬ 2+¬ e/ou 6 a 50 mmol/kg de Mg¬ 2+¬.
