Abstract

"PELìCULAS ANTIMICROBIANAS COMESTìVEIS COM áCIDOS ORGâNICOS INCORPORADOS". A presente invenção fornece uma película comestível e solução de película compreendendo ácidos orgânicos incorporados; proteína e glicerol úteis para revestir fruta inteira crua, fruta cortada fresca, vegetais, carne, aves domésticas, frutos do mar, cereais, nozes, etc. Além disso, as películas comestíveis da presente invenção podem inibir o crescimento de patógeno incluindo Listeria monocytogens, Salmoneita gaminara e E. coli 0157:H7. Em uma modalidade preferida, a película comestível compreende 0,9% de glicerol; 10% de proteína de soja; e 2,6% de ácido málico. A presente invenção também fornece um método para revestir produtos comestíveis com películas comestíveis sem mascarar a cor porém aumentando a vida de prateleira.
