Abstract

"ATIVADOR PARA UM FERMENTO A BASE DE BACTéRIAS LáCTEAS, UTILIZAçãO DO MESMO, FERMENTO ATIVADO A BASE DE BACTéRIAS LáCTEAS, E, PROCESSO PARA A PREPARAçãO DE UM PRODUTO LáCTEO". A presente invenção tem por objeto um ativador para um fermento à base de bactérias lácteas, caracterizado em compreende pelo menos uma substâncias nitrogenada, - um sistema tampão capaz de manter o pH da atividade de bactérias lácteas às quais deve ser associado o referido ativador em um valor compreendido entre 5 e 7, e que é isento de açúcar(es) adicionado(s) metabolizável (eis) pelas referidas bactérias lácteas. A presente invenção também refere-se ao processo de preparação de um produto lácteo caracterizado pelo emprego deste ativador.
