Abstract
A találmány tárgya tejsavbaktérium-alapu fermentum aktivátora,amelynek összetevői legalább - egy nitrogéntartalmú anyag és - egyolyan pufferrendszer, amely a fenti aktivátorral kombinálandótejsavbaktérium aktivitásának pH-ját 5 és 7 közötti értéken tartja, ésamely a tejsavbaktériumok által metabolizálható hozzáadottcukortól/cukroktól mentes. A találmány tárgyát képezi továbbá a fentiaktivátor alkalmazása tejsavbaktérium-alapú fermentum aktiválására, afenti aktivátorral aktivált tejsavbaktérium-alapú fermentum, valaminteljárás tejtermékek előállítására a fenti aktivált fermentumalkalmazásával.
