Abstract

"PROCESSO DE CULTURA DE MICROORGANISMOS". A presente invenção se refere a um processo de cultura de microorganismos, permitindo baixar o potencial de óxido-redução do meio de cultura, caracterizado pelo fato de se efetuar essa cultura em condições redutoras obtidas por um gás redutor comparado ao ar, compreendendo o hidrogênio. Ela se refere a esse processo para modificar os fluxos metabólicos, quando da cultura dos microorganismos. Ela se aplica mais particularmente ao domínio alimentício e notadamente à produção de bebidas alcoólicas.
