Abstract
"PROCESSO PARA PREPARAR COMPOSIçãO DE DISPERSãO DE NOZ COM BAIXO TEOR DE GORDURA COM FIBRA E PROTEìNA ELEVADA". Um processo para preparar uma dispersão de noz com teor de gordura reduzido tendo proteína elevada e fibra elevada. O processo compreende as etapas de: (a) preparar uma suspensão de óleo contendo proteína; (b) preparar uma suspensão de óleo contendo açúcar; e (c) combinar a suspensão de óleo contendo proteína e a suspensão de óleo contendo açúcar para formar a dispersão de noz. A "suspensão de óleo contendo proteína" compreende quantidades elevadas de proteínas e fibras. A "suspensão de óleo contendo açúcar" compreende quantidades elevadas de açúcar. A dispersão de noz resultante tem uma relação de proteína para gordura maior do que cerca de 0,68:1 e uma relação de fibra para gordura maior do que cerca de 0,18:1. A dispersão de noz tem bom sabor e textura.
