Abstract

Procédé de préparation d'un isolat de protéine de soya à faibles teneurs en aluminium et phytate, suivant lequel on disperse de la protéine de soya brute dans un milieu aqueux à pH de 8 à 10 à plus de 65 degrés C pendant une durée suffisante pour solubiliser la protéine, on rejette la fraction insoluble de la dispersion obtenue et on amène la fraction soluble de cette dispersion à un pH d'environ 5,0 à 5,5 pour faire précipiter la protéine de soya qu'on recueille tout en rejetant le liquide surnageant.
