Abstract
Emulsion eau-dans-huile comestible utile comme margarine à faible teneur en matière grasse, qui contient environ 10 à 900 parties par million d'un casseur d'émulsion ayant un bilan hydrophile-lipohile de 9 à 20. Des teneurs plus faible en sel sont atteintes sans effets défaborables sur la saveur au moyen du casseur d'émulsion. En variante, à teneur constante en sel, l'addition d'un casseur d'émulsion améliore la perception de la saveur de la margarine. Ces margarines conviennent comme aliments de régime.
