La présente invention se rapporte aux appareils utilisés pour hâcher la viandeo . Dans les appareils connus en usage actuellement, la vis hélicoï- dale qui tourne dans l'enveloppe de l'appareil comprend un bout carré et se termine par un bout d'axe sur lequel est montée une plaque munie de per- forations par où sortent les morceaux de viande ayant été coupés par le couteau rotatif monté sur le bout carrée
Cette construction donne lieu à des inconvénients dont le princi- pal est qu'un espace subsiste toujours entre cet axe rond et le trou pré- vu dans la plaque de sorte que de la viande s'introduit dans cet espace et s'y échauffe en produisant des morceaux de viande noirs.
L'invention a pour but de remédier à cet inconvénient et d'obte- nir en même temps une meilleure coupe et un meilleur centrage de la vis hé- licoidale et du couteau.
En vue de la réalisation de ces buts,. le hache-viande, objet de l'inventions est caractérisé essentiellement en ce que sa plaque perforée présente une forme conique ou sensiblement-conique et en ce que le couteau possède une forme correspondante-qui lui permet de s'ajuster dans la pla- que perforée et d'assurer un centrage de la vis hélicoïdale ou de l'escar- got et du couteau sans prévoir un axe rond s'engageant dans le trou central de la plaque perforée.,
Dans la réalisation pratique de l'invention, les trous de.la plaque perforée sont inclinés et donnent naissance ainsi sur la face inté- rieure de la plaque à des biseaux assurant une meilleure coupe en coopéra- tion avec les lames portées par le couteau.
D'autres caractéristiques de l'invention- et d'autres avantages ressortiront de la description d'un exemple de réalisation qui sera donné ci-après en se référant aux dessins annexés.

Sur les dessins ci-joints, 1 désigne l'enveloppe du hache-viande dans laquelle s'étendl'escargot 2 portant un bout carré 3 sur lequel est monté un couteau présentant la forme représentée par la figure 3, c'est-à- dire qu'il comprend trois ailes 4 qui sont solidaires d'un manchon 4 1 et qui portent des lames 5 amovibles et interchangeables.
Le nombre de ces ailes peut évidemment être différent de trois.
Suivant l'inventions la plaque perforée 6 qui est maintenue en .place grâce à une encoche 7 prévue sur sa périphérie et dans laquelle prend une saillie 8 de l'enveloppe 1 présente une forme conique ou sensiblement conique et le couteau a comme particularité qu'il possède une forme lui permettant d'épouser la forme conique de la plaque 6.
Le trou central de la plaque 6 est taraudé et reçoit une piè- ce tubulaire filetée 9 qui fait saillie vers l'extérieur et sur laquelle prend un écrou 10.
Cette disposition présente l'avantage que les trous 11 de la plaque 6 peuvent être inclinés et qu'ils donnent naissance sur la face infé- rieure de la plaque 6 à des biseaux, ce qui assure une meilleure coupe en coopération avec les lames 5 portées par le couteau.
De plus, on obtient un centrage parfait de la vis hélicoïdale 2 (ou escargot) sans avoir recours, comme dans les machines connues, à un axe pénétrant dans le trou .de la plaque perforée 6 de sorte que la quali-

Il faut ajouter que ces avantages sont maintenus lorsque, par suite de l'usure, on doit procéder à un meulage de la plaque 6 vu que, lors de ce meulage, on peut, en agissant sur la pièce 9, faire en sorte que sa face intérieure lisse se trouve toujours à fleur avec le bord inté- rieur 13 de l'ouverture 14 prévue dans la plaque 6.
