Il est caractérisé par un tranchant placé hors du plan de l'ustensile et en arrière de son bord antérieur, ce tran chant étant relié au plan de l'ustensile par une surface inclinée le long de laquelle les pelures enlevées sont destinées à glisser, ce tranchant servant à produire une rainure périphérique dans l'orange à peler, l'épaisseur de la pelure enlevée par ce tranchant étant une fonction de la distance séparant le tran chant et le bord antérieur, l'ustensile présen. tant en outre une extrémité, destinée à être introduite entre le fruit et la pelure, après la création de la rainure, afin de détacher ladite pelure du fruit.

L'extrémité de l'ustensile, introduite dans cette rainure, permettra ensuite d'enlever en deux ou plusieurs mouvements les deux moi tiés de la pelure.
On se rend facilement compte que l'épais seur de la pelure enlevée par le tranchant sera une fonction de la distance séparant ce tranchant et le bord antérieur de l'ustensile. Dans une autre forme d'exécution, on pourrait prévoir un tranchant réglable, afin d'adapter sa position à l'épaisseur de la pelure à enlever.
Au lieu d'être rapporté, le tranchant pourrait être en une seule pièce avec le reste de l'ustensile.
