La présente invention se rapporte à un appareil utilisé pour la conservation et la maturation de la crème de lait ou d'autres produits analogues.

De cet espace, elle parvient à la sortie d'eau 17, et delà habituellement au même récipient que celui de départ. Grâce à la disposition décrite, le réseau de refroidissement est toujours rempli d'eau, l'eau d'arrivée étant dirigée jusqu'au bas de ce réseau.
En outre, le tank est isolé par une enveloppe en liège 23, afin de conserver le froid provenant de l'intérieur par le réseau de tubes froids.
Dans l'appareil, objet de l'invention, la masse de crème est donc mise continuellement en mouvement et est refroidie d'une manière uniforme, sous l'action de l'eau de refroidissement. La crème est, en effet, agitée par la rotation du réseau frigorifique à une vitesse calculée de façon à éviter le battage de la crème; oette vitesse est variable selon les dimensions et la oapacité du tank.
