Appareil à faire et conserver la crème glacée.
Actuellement, la crème glacée destinée à la vente au détail, est conservée dans des conservateurs comportant, pour chaque type de crème, une sorbetière plongée dans des blocs de glace ou autre source de froid bien isolée de l'extérieur. La crème glacée est préparée dans une machine spéciale, puis, une fois prise, est versée dans la sorbétière du conservateur ; ceci signifie une perte importante de frigories, une perte de temps et constitue en outre un travail désagréable et fastidieux. Dans des machines coûteuses, on a proposé de donner à la sorbétière de la machine à glacer les dimensions des sorbetières du conservateur avec lequel est combinée la machine à faire la crème glacée ; quand la crème glacée est faite dans la machine, on retire la sorbétière que l'on introduit dans le conservateur.
Cette manipulation est désagréable, par suite du froid intense des parois métalliques,de la sorbétière ; elle entraîne encore des pertes

de froid et, à moins d'une construction spéciale, l'introduction des sorbétières dans les blocs de glace est très malaisée.
La présente invention a pour but de supprimer principalement les pertes de froid dues au transvasement, ainsi que les manipulations désagréables des sorbétières aussi bien que de la crème glacée pendant son transvasement ; elle a également pour but d'éviter l'encombrement des machines à faire la crème glacée.
L'idée directrice de l'invention est d'aménager le conservateur de crème glacée de telle manière que cette crème glacée puisse être faite directement dans ce conservateur, dans l'une et l'autre des sorbétières de celui-ci. De cette manière, la crème et les aromates et autres ingrédients peuvent être versés directement dans la sorbétière du conservateur, y être directement glacés, puis conservés pour toute la durée de la vente en détail.
L'invention consiste donc en un conservateur normal de crème glacée, comportant au moins une sorbétière entourée d'un espace récepteur de la réserve de froid artificiel, lui-même délimité par des parois bien isolées, la caractéristique de ce conservateur étant que chaque sorbétière peut tourner autour de son axe vertical et peut recevoir un couvercle spécial, armé d'un mécanisme à main ou à moteur, par lequel un agitateur monté dans la sorbetière, au travers du couvercle, peut être mis en rotation dans un sens, tandis que le couvercle, et avec lui la sorbétière, tourne, de préférence en sens opposé. L'invention protège le conservateur ainsi combiné, de même, comme élément nouveau, le dit mécanisme et les moyens éventuels d'attache au conservateur.
A titre uniquement indicatif, le dessin annexé montre trois exemples de réalisation de l'objet de l'invention.
Dans l'exemple de la fig.l, où le mécanisme à faire la crème glacée est manoeuvré à la main, le conservateur est représenté en coupe verticale transversale. Il est fait d'un corps 1 à parois par exemple en isoxylotekt, intérieurement tapissées d'une doublure métallique 2. ; cette espèce d'armoire est équipée d'un couver-

cle supérieur 3 également en masse isolante, monté à charnières.
Dans ce couvercle qui, normalement, reste fermé, sont pratiquées une série d'ouvertures 4 dont chacune correspond à une sorbétière 5. Ces ouvertures sont chacune munies de leur couvercle isolant, non représenté, qui s'emboîte exactement et peut être monté à charnières. La sorbétière est cylindrique et est logée avec jeu dans un treillis cylindrique 6 dont le but est comme il a été exposé dans le brevet N 423. 056. De préférence, le fond de ce cylindre 6 porte une crapaudine 7 pour la réception du tourillon axial 8 fixé au fond de la sorbetière. 9 est une paroi délimitant l'espace 10 pour des blocs de glace en réserve, et 11 est une plaque horizontale, avec laquelle la sorbétière affleure à peu près.
Cette plaque peut comporter une ou deux pinces non représentées qui se rabattent sur le bord de la sorbétière pour maintenir celle-ci et l'empêcher de s'élever sous l'action de l'eau due à la fusion de la glace dans la chambre 12. Ainsi équipé, le conservateur peut servir à conserver longtemps de la crème glacée à vendre en détail. Il est cependant expressément spécifié que l'invention ne se limite pas à ce type de conservateur ; elle s'applique à tous les cas où une sorbétière à crème glacée est logée dans un espace de réfrigération, pour la conservation de la crème pendant son débit ou son transport ; la source de froid peut être quelconque.
La paroi frontale et le dos du meuble conservateur portent, suivant le diamètre de la sorbetière, chacune un organe 13 approprié (pince, attaches, etc.) pour la réception et la fixation amovible d'un support 14 qui, le couvercle de l'ouverture 4 étant enlevé ou relevé, s'étend diamétralement à la dite ouverture, sur toute la largeur du couvercle 3. Ce support rigide porte une boite ou carter 15 dont le manchon 16 est traversé par un arbre horizontal 17 sur l'extrémité libre duquel s'emboîte la manivelle ou volant de manoeuvre 18. Dans la boîte 15, l'arbre porte un pignon cône 19.en prise avec un pignon cône 20 calé sur l'arbre

vertical 21, dont l'extrémité supérieure est portée par la boite 15 ; inférieurement, cet arbre se termine par une béquille carrée 22.
D'autre part, avant la mise en place de cet ensemble, les attaches reliant la sorbétière à la paroi 11 ont été libérées, et on emboîte sur la sorbétière un couvercle 23 dont la hauteur est telle que son fond supérieur affleure sensiblement avec le couvercle 3. Ce fond supérieur est taillé en forme de pignon cône 24, et est traversé librement par l'arbre 25 portant les bras mélangeurs 26 (plus exactement, l'arbre 25 peut tourner dans ce fond, mais ne peut se déplacer longitudinalement). Le dit arbre 25 se termine supérieurement par un bout carré qui, lors de la mise en place du carter 15, s'engage dans la béquille 22, tandis que le pignon 24 vient en prise avec le pignon 19.
La paroi conique du couvercle 23 porte antérieurement une butée 27 susceptible de venir attaquer la butée interne 28 de la sorbétière.
Dans ces conditions, on comprend que le mouvement de rotation du volant de manoeuvre détermine la rotation des bras mélangeurs batteurs 26 dans un sens et la rotation de la sorbétière dans l'autre sens, tout comme dans une machine ordinaire à faire la crème glacée. Quand la crème est terminée, il suffit de retirer le couvercle 23 et le support 14.
On comprend que la forme de ce support pourrait varier, l'invention consistant uniquement sous ce rapport à équiper momentanément la sorbétière et le conservateur d'un mécanisme manuel de machine à faire la crème glacée.
Dans l'exemple de la fig.2, qui est une vue par derrière, le conservateur comporte deux sorbétières ; le mécanisme supérieur de la fig.l reste identique, avec cette différence que le volant à main est remplacé par une poulie 30 à entraîner par un moteur électrique fixe 31. Ce moteur est placé exactement à égale distance des deux sorbétières. On peut prévoir une poulie 30 pour

chaque sorbetière, qui restent à demeure sur le conservateur, le mécanisme, à partir de l'arbre 17 (y compris le support 14) étant seul amovible. Dans cette figure, le couvercle 29 d'une ouverture 4 est représenté relevé.
Le moteur pourrait être situé à tout autre endroit ;il peut d'ailleurs être logé dans le conservateur où il sert à produire le froid, son arbre se prolongeant extérieurement pour entraîner la poulie 30 pendant la fabrication de la crème glacée.
Dans l'exemple de la fig.3, le mouvement des bras mélangeurs et de la sorbétière est encore obtenu par moteur électrique.
Celui-ci est mobile ; il est désigné par 33 et est porté par un support 34 déplaçable sur galets ou roues, et susceptible d'être réglé en hauteur grâce à la vis 35. Le carter du moteur .se prolonge par une tête 36, dans laquelle aboutit l'arbre du moteur ; dans ce carter, l'arbre 37 porte le pignon cône 38 en prise avec 39 et avec 40. Le moyeu creux 41 du pignon 40 est supporté par le rebord inférieur de la tête 36, et dans le creux à section carrée de ce moyeu, pénètre le moyeu 42, également à creux carré, du pignon 39 supporté par la tête 36.
Le couvercle 43 à emboîter sur la sorbétière 5 est semblable à celui de la fig'.1 quant à sa liaison avec la sorbétière ; il est traversé par l'arbre des agi- tateurs, qui pénètre dans le creux du moyeu 42., et il porte supériéurement une saillie carrée 44 qui s'engage dans le creux du moyeu 41. Le fonctionnement est identique à celui des exemples précédents.

Apparatus for making and storing ice cream.
Currently, ice cream intended for retail sale is kept in preservatives comprising, for each type of cream, an ice cream maker immersed in blocks of ice or other source of cold well insulated from the outside. Ice cream is prepared in a special machine, then, once set, is poured into the ice cream maker of the conservator; this means a significant loss of frigories, a waste of time and moreover constitutes unpleasant and tedious work. In expensive machines, it has been proposed to give the ice cream maker of the icing machine the dimensions of the ice cream makers of the preservative with which the ice cream maker is combined; when the ice cream is made in the machine, we remove the ice cream maker and put it in the conservator.

cold and, unless there is a special construction, the introduction of ice cream makers into the blocks of ice is very difficult.
The object of the present invention is to eliminate mainly the losses of cold due to the decanting, as well as the unpleasant handling of ice cream makers as well as of ice cream during its decanting; it is also intended to avoid the clutter of ice cream machines.
The guiding idea of the invention is to arrange the ice cream preservative in such a way that this ice cream can be made directly in this preservative, in one and the other of the ice cream makers thereof. In this way, the cream and the aromatics and other ingredients can be poured directly into the ice cream maker of the conservator, be directly frozen there, and then kept for the duration of the retail sale.
The invention therefore consists of a normal ice cream preservative, comprising at least one ice cream maker surrounded by a receiving space for the artificial cold reserve, itself delimited by well-insulated walls, the characteristic of this preservative being that each ice cream maker can rotate around its vertical axis and can receive a special cover, armed with a hand or motor mechanism, by which a stirrer mounted in the ice cream maker, through the cover, can be rotated in one direction, while the lid, and with it the ice-cream maker, turns, preferably in the opposite direction. The invention protects the conservator thus combined, likewise, as a new element, said mechanism and any means of attachment to the conservator.
By way of indication only, the appended drawing shows three embodiments of the object of the invention.
In the example of fig.l, where the mechanism for making the ice cream is operated by hand, the conservator is shown in vertical cross section. It is made of a body 1 with walls for example in isoxylotekt, internally lined with a metal lining 2.; this kind of cabinet is equipped with a

On the other hand, before the installation of this assembly, the fasteners connecting the ice-cream maker to the wall 11 have been released, and a cover 23 is fitted onto the ice-cream maker, the height of which is such that its upper bottom is substantially flush with the cover. 3. This upper base is cut in the form of a cone pinion 24, and is freely traversed by the shaft 25 carrying the mixing arms 26 (more exactly, the shaft 25 can rotate in this base, but cannot move longitudinally). In the example of fig.2, which is a view from behind, the conservator has two ice cream makers; the upper mechanism of fig.l remains identical, with the difference that the handwheel is replaced by a pulley 30 to be driven by a fixed electric motor 31. This motor is placed exactly at an equal distance from the two ice cream makers. A pulley 30 can be provided for

each ice-cream maker, which remain permanently on the conservator, the mechanism, from the shaft 17 (including the support 14) being only removable. In this figure, the cover 29 of an opening 4 is shown raised.
The motor could be located at any other place; it can moreover be housed in the conservator where it is used to produce the cold, its shaft extending outwardly to drive the pulley 30 during the manufacture of the ice cream.
In the example of FIG. 3, the movement of the mixing arms and of the ice-cream maker is still obtained by an electric motor.
This one is mobile; it is designated by 33 and is carried by a support 34 movable on rollers or wheels, and capable of being adjusted in height by means of the screw 35. The motor casing is extended by a head 36, in which the shaft ends. of the motor ; in this housing, the shaft 37 carries the cone pinion 38 engaged with 39 and with 40. The hollow hub 41 of the pinion 40 is supported by the lower edge of the head 36, and in the square section hollow of this hub, penetrates the hub 42, also with a square hollow, of the pinion 39 supported by the head 36.
The cover 43 to fit on the ice-cream maker 5 is similar to that of FIG. 1 as regards its connection to the ice-cream maker; it is traversed by the shaft of the agitators, which penetrates into the hollow of the hub 42., and it bears a square projection 44 which engages in the hollow of the hub 41. The operation is identical to that of the preceding examples. .
