" Prooédé et dispositif pour l'allongement d'un rouleau de pâte ".
L'invention est relative à un procédé et à un dispositif pour l'allongement d'un rouleau de pâte.
On a déjà proposé différents prooédés et dispositifs dans le but de produire ce qu'on appelle un effet d'allongement, par voie mécanique. Toutefois, jusqu'à présent, il n'a pas en- oore paru possible d'appliquer un dispositif ou un procédé mé- canique répondant non seulement au desideratum que la pâte ne puisse être ce qu'on appelle "travaillée à mort" , mais égale- ment à d'autres desiderata des boulangers concernant la forme et la oomposition d'un rouleau de pâte allongé.
L'invention a pour but de supprimer les inconvénients qui subsistent et consiste en ce que le rouleau de pâte ,tout en toumant, est déplacé parallèlement à lui-même et est en outre mis en contact aveo un rouleau pouvant, de préférence tourner, qui tend à contrecarrer la rotation du rouleau de pâte.

En outre, suivant l'invention, la pression que le rouleau exerce sur le rouleau de pâte est, de préférence, réglable.
De préférence, suivant l'invention,on fait en outre usage d'un dispositif,¯qui se caractérise en ce que, dans un oanal d'allongement, lequel est formé par un transporteur mobile et par une paroi de roulage placée à quelque distance au-dessus de celui-ci, un rouleau, pouvant de préférence tourner, peut se déplacer dans le trajet du rouleau de pâte, de telle manière que le rouleau tende à contrecarrer la rotation du rouleau de pâte, ledit rouleau, après avoir parcouru un ohemin déterminé, étant mis hors de contact aveo le rouleau de pâte.
Pour l'application de l'invention, la paroi de roulage doit ne pas être placée à courte distance au-dessus du trans- porteur, de manière que la pâte ne soit pas "travaillée à mort"; la chambre d'allongement est donc plus spacieuse dans la direc- tion de la hauteur que les chambres connues de ce type et oeoi est possible parce qu'il est fait usage d'un rouleau qui exeme une action de frottement sur le rouleau de pâte, par laquelle la peau de la pâte reçoit une tension périphérique utile et on obtient une aotion d'allongement élastique, car le rouleau de pâte n'est jamais entièrement enfenné.
Suivant l'invention,le rouleau peut être accouplé, par l'intermédiaire d'une roue à chaîne fixée sur lui ou d'une autre manière, à une chaîne ou autre dispositif d'entraînement à déplaoement oontinu. Ainsi on est le mieux à même de régler l'action du rouleau, o'est-à-dire de déterminer sa vitesse de rotation par rapport à la vitesse d'avancement de la oourroie, du tambour ou autre transporteur.

Suivant l'invention, l'action du contrepoids ou du ressort s'exerce par l'intermédiaire d'un accouplement à oliquet ou au- trement sur l'arbre, de manière telle qu'après un déplaoement déterminé du rouleau par le rouleau de pâte, le rouleau soit libéré en totalité ou en partie de l'influence de l'aotion du contrepoids ou du ressort.
Dans une forme de réalisation pratique d'un dispositif suivant l'invention, la béquille peut être fixée sur un arbre qui est placé à quelque distance au-dessus de la paroi de rou- lage et est maintenu normalement dans la position de départ, dans laquelle le rouleau se trouve dans l'extrémité réceptrice du oanal ; sur ledit arbre est monté un oliquet, qui, norma- lament, engrène avec une roue à roohet, laquelle est solidaire d'une poulie, sur laquelle s'exerce l'action du contrepoids, tandis que dans le trajet du oliquet est placé une butée,la- quelle entre en aotion à. peu près au moment ou le rouleau va libérer le rouleau de pâte.
Suivant l'invention, le dispositif peut être subdivisé dans la direction de la longueur et/ou dans la direction de la largeur, selon la oapaoité de produotion voulue.
Le nouveau dispositif d'allongement peut être précédé d'un dispositif d'enroulement, qui, suivant l'invention, consiste en une série d'organes en forme de barres disposés les uns derrière les autres dans la direotion du transport dans le tra- jet de la tranohe de pâte renversée qui arrive et supportés de

A la fig. 1, 1 est le transporteur qui fait passer une tranche de pâte, amenée à la fome convenable, sous les disposi- tifs de travail de la pâte. La tranche passe sous un rouleau 2 et, en sortant de dessous oelui-oi, est immédiatement recourbée par un clapet 3 qui s'étend sur toute la largeur de la tranohe.

Dans cette chambre de roulage, un rouleau 10 peut être déplaoé dans des guides 11; autour des tourillons 12 de ce rouleau vient prendre l'extrémité fendue 13 d'une bé- quille 14, qui est fixée sur un arbre 15. Sur cet aibre est oalée une béquille déplaçable 16 portant des oliquets à queue 17,18 qui sont normalement maintenus, par un ressort 19, en prise aveo une roue à roohet 20. Cette roue à roohet 20, conjointement avecune poulie à oorde 21 reliée à elle,est montée.folle sur 1 arbre 15.
Sur cette poulie à oorde 21 est fixée une oorde 22 à laquelle est fixé un contrepoids 23, au moyen duquel la pression progressive du rouleau 10 contre le rouleau de pâte peut être réglée.
Il est évident que le rouleau, par suite de cette cons- truotion,est toujours poussé en avant aveo une pression déter- minée (figé 3). La béquille 14, aveo le, rouleau 10, est à peu près équilibrée au moyen d'un levier 24 à contrepoids dépla- gable 25 fixé sur l'arbre 15. La position de départ représen- tée (fig. 3) est déterminée par une oame 26 de la poulie 21 et par une butée fixe 27.
Sur les tourillons du rouleau 10 sont fixés des roues à chaîne 28 qui engrènent aveo des chaînes 29 à mouvement oonti- nu, de sorte que le rouleau est toujours maintenu en rotation.
La vitesse périphérique du rouleau 10 est plus petite que la vitesse de la oourroie 1.
Aussitôt qu'une tranche entièrement ou presque entière- ment enroulée, arrive dans la chambre d'allongement à l'état de rouleau de pâte au sortir du dispositif d'enroulement 4,5, le rouleau de pâte entre en contact avec le rouleau 10 et avan- ce, tout en tournant, en poussant le rouleau 10 devant lui. La vitesse périphérique du rouleau 10 s'en trouve augmentée jus- qu'à environ 1/3 de la vitesse de la courroie. La pâte est

Dans la construction représentée, le dispositif d'al- longement est subdivisé en deux parties; on obtient ainsi n' l'avantage que lorsqu'on emploie qu'un seul roulqau 10 par canal d'allongement, oe rouleau est rapidement de nouveau disponible pour un rouleau de pâte suivant, ce qui est favorable au rendement de la machine. La paroi de roulage peut alors oon- sister en une oourroie qui se déplaoe plus rapidement que le transporteur, tandis que le rouleau 10 agit alors sur le côté de la paroi de roulage dans le même sens que maintenant sur le côté du transporteur.
On peut aussi faire usage de rouleaux, soit libres soit complètement dirigés, qui se déplacent en circuit, le rouleau de pâte lui-même libérant chaque fois di- rectement ou indirectement un rouleau 10, qui tombe alors devant le rouleau de pâte dans le oanal d'allon- gement et y remplit, de la manière déjà décrite, @ sa fonction dans l'opération d'allongement, etc..
D'ailleurs, on pourrait suspendre les rouleaux dans une étroile à branches fixée sur un arbre ou dans un support en forme de chaîne , sans sortir du cadre de l'invention.
