FOUR DE CUISSON A RAYONS INFRAROUGES
La présente invention a pour objet un four à rayons infrarouges apte, en particulier, à cuire et à réchauffer des petits pains, pains grillés, casse-croûte et analogues.
Ainsi qu'il est connu, ces produits alimentaires, constitués par une ou deux tranches de pain garnies de différentes façons à l'aide de salaisons, fromage, légumes ou autres, demandent à être rôties sur les deux faces.
Dans l'état actuel de la technique, l'action de rôtissage est obtenue en utilisant comme éléments chauffants des résistances électriques parcourues par du courant ou des brûleurs à gaz. Dans les deux systèmes, ces éléments émettent des rayons infrarouges qui viennent frapper les produits à chauffer.
Les conformations qui caractérisent les différents appareils aptes à rôtir les tranches de pain garnies, sont variables mais toutes peuvent être ramenées à une plaque de matière réfractaire sur laquelle on pose les produits à cuire.
Dans le cas du rôtissage de casse-croûte ou lorsqu'on a à chauffer des petits pains, on demande à ce que ces produits ne présentent pas toujours la même face à la source de chaleur, ce qui exige que l'opérateur retourne périodiquement le produit de manière à ce que les faces externes des tranches soient cuites de la même façon.
Une forme de réalisation satisfaisante de four à rayons infrarouges particulièrement adaptée aux utilisations énumérées ci-dessus, c'est-à-dire en mesure d'opérer une cuisson uniforme des casse-croûte sur les deux faces, ainsi que d'assurer la cuisson de petits pains garnis, sans qu'il soit nécessaire de les retourner pendant cette opération, est celle décrite et

revendiquée dans le Modèle d'Utilité italien nO 211 040, déposé le 24.09. 86 par la même Demanderesse.
Ce four antérieur est constitué par deux corps superposés, sensiblement de forme tronconique et séparés par une partie cylindrique présentant, au niveau de sa surface inférieure, un brûleur à gaz disposé verticalement, la flamme issue de la combustion de ce gaz venant chauffer au rouge un élément de forme légèrement tronconique, réalisé de préférence en matière réfractaire, dont l'embouchure intérieure est placée au niveau de la partie terminale du brûleur.
En rougissant, cet élément émet des rayons infrarouges qui sont réfléchis par les parois internes des deux corps tronconiques en direction des produits à cuire, lesquels sont placés sur une grille placée horizontalement à l'intérieur du four.
Grâce au fait que le niveau de la grille est placé au niveau de la médiane transversale de la direction des rayons infrarouges du four, il est évident que les produits placés à l'intérieur de ce four sont cuits de façon presque uniforme sur les deux faces.
Le four à rayons infrarouges qui fait l'objet de la présente invention représente une solution améliorée, aussi bien du point de vue de la construction que du point de vue fonctionnel, du four antérieur susmentionné.
Les solutions innovantes comparativement à la réalisation déjà connue concernent la possibilité d'accéder à l'intérieur du four sans avoir à déplacer verticalement l'une des deux parties tronconiques qui constituent la paroi réfléchissante, et une série d'améliorations constructives visant la zone du brûleur.
De manière plus explicite la partie cylindrique du four suivant l'invention, partie cylindrique qui correspond à la partie centrale du corps

dudit four, est découpé d'une ouverture permettant d'accéder à l'intérieur de ce four, solidaire de la partie supérieure tronconique dudit corps.
En outre, la partie centrale cylindrique du corps du four est conformée de manière à définir une porte constituée par deux battants symétriques qui s'ouvrent vers l'extérieur du corps.
Le développement angulaire de la porte ouvrante est égal ou légèrement supérieur à la moitié de la circonférence externe du corps.
Cette solution constructive permet, lorsque les deux battants sont entièrement ouverts, d'extraire la grille circulaire interne et la partie tronconique inférieure du corps.
De cette façon, on détient l'avantage que les opérations de nettoyage des différents constituants du four peuvent être exécutées en maintenant fixe le groupe du brûleur complet (tube de Venturi, électro-pilote, robinets de commande, robinet d'allumage et de réglage, etc. ), conditions prévues par les normes de sécurité qui exigent l'élimination dans toute la mesure possible des conduits de gaz flexibles.
Les innovations constructives dans la zone du brûleur concernent en particulier l'élément tronconique radiant et la conformation particulière de l'extrémité supérieure du tube Venturi.
L'élément radiant est caractérisé en ce qu'il est mobile, c'est-à-dire qu'il est simplement accroché à la paroi tronconique supérieure pendant le fonctionnement, tandis que, pour le nettoyage, il peut être soulevé et placé dans une position supérieure qui l'éloigne de la zone du brûleur.
L'élément radiant présente, à l'intérieur de sa forme tronconique, une pluralité de petits disques, placés de façon coaxiale sur l'axe dudit élément, ces

disques ayant pour fonction de régler la vitesse de l'écoulement des gaz brûlés ascendants.
Des essais en laboratoire ont montré que la section la plus satisfaisante des disques est celle qui présente une surface convexe vers la partie inférieure ; cette conformation a l'avantage d'empêcher qu'il ne se forme des poches de gaz résiduel à proximité de l'assemblage entre ledit disque et la tige centrale de support.
Le tube Venturi présente, comme caractéristiques de nouveauté, la présence, dans sa partie supérieure, d'un collier ayant pour but d'assurer que la base inférieure de l'élément radiant est parfaitement coaxiale au corps du tube de Venturi, et l'application d'un profilé brise-flamme au-dessous du tamis de fermeture supérieur du corps précité.
La conformation optimale du brise-flamme est celle réalisée avec trois tiges ayant une extrémité commune et disposées radialement à 120 les unes des autres.
Finalement, on vise une autre conformation du four selon l'invention, qui prévoit la possibilité de soulever la partie tronconique supérieure et la partie cylindrique sous-jacente solidaire de celle-ci, pour les opérations de nettoyage à l'intérieur dudit four.
Du point de vue de la construcr-ion, cetr-e deuxième conformation présente donc deux ancrages différents, un ancrage inférieur fixe qui supporte la partie tronconique supérieure, ancrage qui est caractérisé par le fait de rester fixe, et un ancrage supérieur, qui supporte la partie tronconique supérieure mobile dans la direction verticale.
L'ancrage mobile implique l'emploi d'organes de rappel élastiques, placés à l'intérieur de la colonne de support de la partie tronconique inférieure et

réalisée avec une technique de construction connue en soi.
Ces caractéristiques de l'invention ainsi que d'autres seront plus complètement exposées au moyen de la description d'une forme de réalisation possible, donnée uniquement à titre d'exemple illustratif et non limitatif à l'aide du dessin annexé sur lequel la figure 1 est une vue par l'avant d'un four suivant l'invention en position de travail, avec coupe partielle ; la figure 2 est une vue de côté de ce four et en position de travail et avec coupe partielle ; la figure 3 est une vue par l'avant du four avec coupe partielle, l'élément radiant central étant soulevé ; la figure 4 est une coupe horizontale selon la ligne IV-IV de la figure 3, les deux battants étant ouverts ; la figure 5 est une coupe de détail de la zone du brûleur ; la figure 6 montre en coupe la partie supérieure, du tube Venturi. ;

Comme on peut le voir sur les figures 1 à 4, le four selon l'invention est constitué par deux corps 1 et 2 opposés, sensiblement de forme tronconique, maintenus espacés par une partie cylindrique 3, ledit four présentant, au niveau de sa partie inférieure, un

brûleur à gaz 4 disposé verticalement ; la flamme issue de la combustion du gaz fait rougir un élément 5 de forme légèrement tronconique, réalisé en une matière réfractaire et constitué par un grillage en tôle déployée, la bouche inférieure 6 de cet élément 5 étant placée au niveau de la partie terminale du brûleur précité et étant maintenue guidée par la bague 7, solidaire de ce dernier.
L'élément 5, en rougissant, émet des rayons infrarouges qui sont réfléchis vers les produits 8 à cuire par les parois internes des deux corps tronconiques 1 et 2, lesdits produits 8 étant placés sur une grille 9 qui est disposée horizontalement à l'intérieur du four et qui prend appui sur l'élément tronconique inférieur 2 en étant ancrée sur ce dernier.
Une première caractéristique de l'invention réside dans le fait que la partie centrale cylindrique 3, outre le fait qu'elle est ancrée au corps tronconique supérieur 1 et qu'elle présente une ouverture avant 10 qui permet d'accéder à l'intérieur du four pour prélever ou déposer les produits 8, est avantageusement conformée de manière à réaliser une porte constituée par deux battants ouvrants 11, symétriquement opposés, ladite porte ayant un développement angulaire légèrement plus grand que la moitié de la partie centrale elle-même et étant reliée à la partie fixe 12 dudit corps 3 par les charnières 13.
Lorsque les battants 11 sont entièrement ouverts, cette solution de construction permet d'extraire facilement la grille 9 et le corps tronconique inférieur 2, ce dernier étant simplement appuyé sur la calotte 14, laquelle peut tourner autour de l'axe du four, ce qui facilite notablement les opérations de nettoyage intérieur de celui-ci.

l'élément central conique radiant 5, lequel est indépendant du reste du corps du four, de sorte qu'il peut se déplacer verticalement le long de l'axe de ce dernier.
En particulier, pendant le fonctionnement du four, l'élément radiant 5, doté des saillies supérieures 15, est soutenu par des tiges saillantes 16 solidaires de la paroi de la cheminée 17 (voir figure 1) tandis qu'à l'état de repos et lorsqu'il est nécessaire de nettoyer la grille 9, ou d'agir sur le brûleur 4, on soulève ledit élément 5 qui vient s'ancrer aux deux tiges 18 placées elles aussi à l'intérieur de ladite cheminée 17, mais dans une position supérieure par rapport aux tiges précédentes 16.
L'élément radiant 5 est lui aussi innovant en ce sens qu'il présente une pluralité de disques coaxiaux 19 placés à l'intérieur du corps tronconique perforé 20, ces disques étant conformés de manière à former une convexité dirigée vers le bas (voir figure 9), en vue de faciliter l'évacuation des fumées de la partie inférieure desdits disques.
Finalement, il est avantageux de prévoir à l'extrémité 21 du tube Venturi, exactement au-dessous du grillage perforé supérieur 22 à son tour recouvert latéralement par le collier 23, un brise-flamme 24 constitué par trois tiges de petit diamètre disposées radialement et équidistantes.
Cette conformation du brise-flamme permet de piloter la flamme elle-même, c'est-à-dire de la rendre plus homogène et de faire en sorte qu'elle soit entretenue à la sortie du tube de Venturi.
Le four selon l'invention, outre les caractéristiques innovantes présentées plus haut, peut être conformé de manière à permettre le soulèvement simultané du corps supérieur tronconique 1 et de la

partie cylindrique centrale 3, comme illustré sur la figure 10.
Avec cette solution, la structure de support du four devra prévoir une partie inférieure fixe sur laquelle le corps tronconique inférieur 2 et le groupe de commande du gaz 27 sont ancrés au moyen de la traverse 26, et une partie mobile qui supporte le corps tronconique supérieur 1 au moyen de la traverse 29, en prévoyant par ailleurs des organes de rappel élastiques 30 et des organes de blocage 31.

INFRARED RAY COOKING OVEN
The present invention relates to an oven with infrared rays capable, in particular, of baking and reheating rolls, toasted breads, snacks and the like.
As is known, these food products, consisting of one or two slices of bread garnished in different ways using cured meats, cheese, vegetables or the like, require to be roasted on both sides.
In the current state of the art, the roasting action is obtained by using as electrical elements electric resistances traversed by current or gas burners. In both systems, these elements emit infrared rays which strike the products to be heated.
The conformations that characterize the various devices capable of roasting the slices of bread, are variable but all can be reduced to a plate of refractory material on which the products to be baked are placed.
In the case of roasting snacks or when we have to heat rolls, we ask that these products do not always have the same face to the heat source, which requires that the operator periodically turns the produced so that the outer sides of the slices are cooked in the same way.
A satisfactory embodiment of an infrared ray oven particularly suitable for the uses listed above, that is to say capable of operating a uniform cooking of snacks on both sides, as well as ensuring cooking rolls topped, without the need to turn them during this operation, is that described and

claimed in Italian Utility Model No. 211 040, filed on 24.09. 86 by the same Applicant.
This front furnace is constituted by two superposed bodies, substantially of frustoconical shape and separated by a cylindrical part having, at its lower surface, a gas burner arranged vertically, the flame resulting from the combustion of this gas coming to heat red a element of slightly frustoconical shape, preferably made of refractory material, the inner mouth of which is placed at the level of the terminal part of the burner.
When blushing, this element emits infrared rays which are reflected by the internal walls of the two frustoconical bodies in the direction of the products to be cooked, which are placed on a grid placed horizontally inside the oven.
Thanks to the fact that the level of the grid is placed at the level of the transverse median of the direction of the infrared rays of the oven, it is obvious that the products placed inside this oven are cooked almost uniformly on both sides. .
The infrared oven which is the subject of the present invention represents an improved solution, both from the construction point of view and from the functional point of view, of the above-mentioned prior oven.
The innovative solutions compared to the already known embodiment relate to the possibility of accessing the interior of the oven without having to vertically move one of the two frustoconical parts which constitute the reflecting wall, and a series of constructive improvements targeting the area of the burner.

of said oven, is cut out with an opening allowing access to the interior of this oven, integral with the frustoconical upper part of said body.
In addition, the cylindrical central part of the body of the furnace is shaped so as to define a door constituted by two symmetrical leaves which open towards the outside of the body.
The angular development of the opening door is equal to or slightly greater than half of the external circumference of the body.
This constructive solution allows, when the two leaves are fully open, to extract the internal circular grid and the lower frustoconical part of the body.
In this way, there is the advantage that the cleaning operations of the various components of the oven can be carried out by keeping the entire burner unit stationary (Venturi tube, electro-pilot, control valves, ignition and adjustment valve , etc.), conditions provided for by safety standards which require the elimination as far as possible of flexible gas pipes.
The constructive innovations in the burner area relate in particular to the radiant frustoconical element and the particular conformation of the upper end of the Venturi tube.
The radiant element is characterized in that it is mobile, that is to say it is simply hung on the upper frustoconical wall during operation, while, for cleaning, it can be lifted and placed in a higher position which moves it away from the burner area.
The radiant element has, inside its frustoconical shape, a plurality of small discs, placed coaxially on the axis of said element, these

discs whose function is to regulate the speed of the flow of ascending burnt gases.
Laboratory tests have shown that the most satisfactory section of the discs is that which has a convex surface towards the lower part; this conformation has the advantage of preventing pockets of residual gas from forming near the connection between said disc and the central support rod.
The Venturi tube has, as novelty characteristics, the presence, in its upper part, of a collar intended to ensure that the lower base of the radiant element is perfectly coaxial with the body of the Venturi tube, and the application of a flame-breaking profile below the upper closure screen of the aforementioned body.
The optimal conformation of the flamebreaker is that made with three rods having a common end and arranged radially 120 from each other.
Finally, another conformation of the furnace according to the invention is aimed at, which provides for the possibility of lifting the upper frustoconical part and the underlying cylindrical part integral with the latter, for cleaning operations inside said furnace.
From the construction point of view, this second conformation therefore has two different anchors, a fixed lower anchor which supports the upper frustoconical part, an anchor which is characterized by remaining fixed, and an upper anchor, which supports the upper frustoconical part movable in the vertical direction.
Mobile anchoring involves the use of elastic return members, placed inside the support column of the lower frustoconical part and

As can be seen in Figures 1 to 4, the oven according to the invention consists of two opposite bodies 1 and 2, substantially of frustoconical shape, kept spaced apart by a cylindrical part 3, said oven having, at its part lower one

gas burner 4 arranged vertically; the flame resulting from the combustion of the gas makes an element 5 of slightly frustoconical shape blush, made of a refractory material and constituted by a mesh of expanded sheet metal, the lower mouth 6 of this element 5 being placed at the level of the terminal part of the burner above and being kept guided by the ring 7, integral with the latter.
The element 5, while blushing, emits infrared rays which are reflected towards the products 8 to be cooked by the internal walls of the two frustoconical bodies 1 and 2, said products 8 being placed on a grid 9 which is arranged horizontally inside. of the oven and which is supported on the lower frustoconical element 2 while being anchored on the latter.
A first characteristic of the invention resides in the fact that the cylindrical central part 3, in addition to the fact that it is anchored to the upper frustoconical body 1 and that it has a front opening 10 which allows access to the interior of the oven for removing or depositing the products 8, is advantageously shaped so as to produce a door constituted by two opening leaves 11, symmetrically opposite, said door having an angular development slightly larger than half of the central part itself and being connected to the fixed part 12 of said body 3 by the hinges 13.
When the leaves 11 are fully open, this construction solution makes it easy to extract the grid 9 and the lower frustoconical body 2, the latter being simply supported on the cap 14, which can rotate around the axis of the oven, which notably facilitates the internal cleaning operations thereof.

the radiant conical central element 5, which is independent of the rest of the body of the furnace, so that it can move vertically along the axis of the latter.
In particular, during operation of the oven, the radiant element 5, provided with upper projections 15, is supported by projecting rods 16 integral with the wall of the chimney 17 (see Figure 1) while in the rest state and when it is necessary to clean the grid 9, or to act on the burner 4, said element 5 is lifted which is anchored to the two rods 18 also placed inside said chimney 17, but in a upper position with respect to the previous rods 16.
The radiant element 5 is also innovative in that it has a plurality of coaxial discs 19 placed inside the tapered frustoconical body 20, these discs being shaped so as to form a convexity directed downwards (see figure 9), in order to facilitate the evacuation of smoke from the lower part of said discs.
Finally, it is advantageous to provide at the end 21 of the Venturi tube, exactly below the upper perforated mesh 22 in turn covered laterally by the collar 23, a flamebreaker 24 constituted by three rods of small diameter arranged radially and equidistant.
This conformation of the flamebreaker makes it possible to control the flame itself, that is to say to make it more homogeneous and to ensure that it is maintained at the outlet of the Venturi tube.
The oven according to the invention, in addition to the innovative features presented above, can be shaped so as to allow the simultaneous lifting of the frustoconical upper body 1 and the

With this solution, the support structure of the oven will have to provide a fixed lower part on which the lower frustoconical body 2 and the gas control group 27 are anchored by means of the cross member 26, and a mobile part which supports the upper frustoconical body 1 by means of the cross-member 29, also providing for elastic return members 30 and locking members 31.
