Abstract

La presente solicitud proporciona un método para aumentar el rendimiento de almidón y/o gluten de granos de maíz en un proceso de molienda en húmedo, que comprende poner en contacto una fracción rica en fibra de granos molidos, con una cantidad efectiva de SO₂ y una cantidad efectiva de una o más enzimas hidrolíticas, en donde por lo menos una de dichas enzimas hidrolíticas se selecciona de enzimas xilanasas y/o celulasas, durante un paso de lavado de fibras.
