Abstract

Producto que comprende dicha composición modificadora del sabor, uso de dicha composición modificadora del sabor para modificar la percepción del sabor en alimentos y bebidas, y método para mejorar la percepción del sabor en un alimento o bebida que comprende agregar dicha composición modificadora del sabor a dicho alimento o bebida. Reivindicación 1: Composición modificadora del sabor que comprende uno o más compuestos modificadores del sabor de acuerdo con la fórmula (1) donde: m y n son de manera independiente entre sí 0 ó 1; R¹, R², R⁶ y R⁸ son, de manera independiente entre sí, hidrógeno o un grupo lineal C₁₋₃ alquilo; R³, R⁴, R⁹ y R¹⁰ representan hidrógeno; R⁵ y R⁷ son, de manera independiente entre sí, seleccionados de hidrógeno, OR, donde R representa un hidrógeno o un grupo lineal C₁₋₃ alquilo; R¹¹ representa hidrógeno o un grupo lineal C₁₋₃ alquilo.
