Abstract

La presente se refiere a una composición alimenticia concentrada y al uso de dicha composición alimenticia para preparar un caldo, una sopa, una salsa, una salsa de jugo de carne o un plato sazonado. La disolución o dispersión de los concentrados alimenticios con alto contenido de sal conocidos en agua o en un plato de comida, con frecuencia, se prolongan por varios minutos, por lo que una dispersión y disolución rápida en el plato resulta de suma importancia. Por lo tanto, existe la necesidad de contar con un concentrado alimenticio que permita altas velocidades de dilución, a la vez que mantenga el impacto del sabor, y en donde dicho concentrado alimenticio se disuelva relativamente rápido en agua caliente o en un plato de comida caliente. Se ha observado que un concentrado alimenticio en forma de gel que tiene un pH inferior a 3,5, que comprende agua, sal de sodio y una pectina gelificante, se disuelve rápidamente en agua caliente o en un plato de comida caliente.
