Abstract

Un método para la producción de un producto pulverulento poroso que contiene un microorganismo, a partir de un concentrado líquido que comprende al menos un cultivo de microorganismos líquidos y una composición portadora, donde la composición portadora comprende al menos un carbohidrato y al menos una proteína, método que comprende las etapas de: i) preparación del concentrado líquido para tener una temperatura de entre 5 y 40ºC y, a esta temperatura, una viscosidad mayor a 150 mPa.s; ii) inyección de un gas de grado comestible en el concentrado preparado a una presión mayor a 0,3 MPa para incorporar íntimamente el gas en el concentrado líquido y formar una espuma estable con una densidad de entre aproximadamente 0,6 a aproximadamente 1,2 kg/l; iii) transporte de la espuma a un dispositivo de atomización en donde la presión de la espuma se reduce de 0,3 MPa a presión atmosférica para proporcionar un producto parcialmente seco; y iv) exposición del producto parcialmente seco a un medio de secado para reducir tanto el contenido de humedad a menos del 5% como la actividad del agua a menos de 0,25 Aʷ, cuando se mide a 20ºC y para proporcionar el producto pulverulento poroso, en donde la temperatura del producto pulverulento poroso en la etapa (iv) no excede 50ºC.
