Complejos de grano entero-hidrocoloide, su preparación y su utilización en alimentos. Los complejos impactan positivamente los alimentos en los que se incorporan, generando saciedad de más larga duración y/o más potente, preferiblemente sin afectar de manera adversa la textura y el procesamiento, haciendo posible, por esto, el desarrollo de ingredientes comercialmente viables para el manejo de la energía. La presente tiene que ver, además, con la reducción del consumo de alimento y/o el manejo del peso mediante el incremento de dicha saciedad.
