Abstract

Reivindicacion 1: Un proceso para la produccion de almidon de maíz resistente, donde el porcentaje en peso de la fraccion de almidon resistente (RS) en el almidon de maíz es mayor, que comprende la expresion de una sintasa II de almidon heterologa en una planta de maíz que tiene un contenido de amilosa entre 15% en peso y 40% en peso; y posteriormente, la extraccion del almidon; donde la secuencia de aminoácidos de la sintasa II de almidon heterologa tiene una identidad de por lo menos 86% con respecto a los aminoácidos 322 a 351 de la secuencia de aminoácidos representada en SEC. ID. NR°: 2, y una identidad de por lo menos 83% con respecto a los aminoácidos 423 a 462 de la secuencia de aminoácidos representada en SEC. ID. NR°: 2, y una identidad de por lo menos 70% con respecto a los aminoácidos 641 a 705 de la secuencia de aminoácidos representada en SEC. ID. NR°: 2; y donde el porcentaje en peso de la fraccion de almidon resistente (RS) se incrementa por lo menos 10%, en comparacion con almidones de maíz de correspondientes plantas de maíz que no expresan una sintasa II de almidon heterologa.
