Abstract

Se revela un método de depurar un producto alimenticio, que consiste en aplicar un líquido depurador acuoso al producto alimenticio rociándolo por todas las superficies exteriores del producto alimenticio de varias direcciones mientras se transporta el producto alimenticio lateralmente con respecto a los rociadores, en donde la velocidad de cada rociador es suficiente para humedecer los microbios adheridos a la superficie del producto alimenticio, en donde el líquido depurador contiene ozono a una concentracion de hasta 15 ppm, y preferiblemente también contiene por lo menos un agente el cual vuelve inactivos los microbios en los alimentos en donde dicho agente está presente a una concentracion suficiente para volver inactivos a los microbios de los alimentos, manteniendo contacto entre dicho líquido depurador y dicho producto alimenticio por suficiente tiempo para humedecer al máximo la superficie del producto alimenticio por medio de que el líquido depurador contenga por lo menos dicho unico agente, y después eliminar mecánicamente por lo menos el 75% de dicho líquido de dicho producto alimenticio.
