Abstract
La presente se relaciona con un método para la preparacion de maltosa y/o almidon modificado, en donde el almidon es tratado con una variante de la amilasamaltogénica que tiene la secuencia de aminoácidos que se muestra como los aminoácidos 1-686 deSEC ID NO: 1. El tratamiento se puede llevar a cabo atemperaturas elevadas, en comparacion con los procesos del arte previo, debido a la incrementada estabilidad térmica de las variantes de amilasa maltogénica.El método es simple y economico, y daor igen a una maltosa de alta pureza y a un producto de almidon modificado economico utilizable, por ejemplo, comoreemplazante de grasa en alimentos. Almidon modificado obtenido por dicho método, proceso de aprestamiento de superficie y/orevestimiento de papel, papelobtenido. Producto alimenticio, concentrado de sabor o agente saborizante que comprenden una emulsion que contiene el almidon modificado.
