Abstract
Procedimiento para la preparacion de un agente espesante que comprende someter frutas u hortalizas a un tratamiento de homogeneizacion y secar elhomogeneizado obtenido para obtener un producto en partículas. Material en partículas obtenido mediante este procedimiento y procedimiento para espesarun producto alimenticio líquido, vertible, manejable con cuchara o exprimible en el que se incorpora en dicho alimento una cantidad de entre 0,1y 30% en peso de un material en partículas.
