Abstract

Un proceso de fabricacion de un producto alimenticio a base de masa laminada y/o hojaldrada. Ese proceso comprende las etapas siguientes: a)preparar una masa cryda qye es amasada sin vapor, esencialmente desprovista de almidon ceroso y que tiene la siguiente composicion: una primera fraccion quecomprende al menos una materia amilácea no pregelatinizada, una segunda fraccion que contiene almidon pregelatinizado no ceroso en una cantidadcomprendida entre el 1% y el 35%, en peso, de dicha primera fraccion, entre el 20% y el 40% de agua, en 2% y 7% de materias grasas; b) laminar y/o hojaldrardicha masa cruda amasada; c) cortar la masa cruda laminada y/u hojaldrada para obtener pollos crudos individuales; d) cocer al horno losbollos crudosindividuales de manera de reducir la humedad y de obtener una superficie por lo menos parcialmente inflada o ampollada.
