Abstract

In producing puffed cereals, a dough from a cereal flour is rolled into sheets, two sheets are superposed, from which shaped pieces are cut out by a die and heat-treated e.g. in an infra-red tunnel, convection oven or by dielectric heating, at 400 DEG F. Pregelatinised starch is preferably mixed with the cereal flour prior to making the dough.
