A pre-cooked dehydrated pasta is prepared by making a pasta-starch dough having a moisture content of 25-35%, kneading and forming into pieces of the desired shape, cooking in water to gelatinise the starch and increase the water content to 65-80%, washing to remove excess surface starch and to cool the pieces to below 100‹F., partially dehydrating the surfaces of the pieces to reduce mutual adhesion, forming into a multi-layer bed and drying to a stable moisture content of less than 10% at such a rate that the moisture is evaporated from the interior of the product at a rate substantially equal to that at which the moisture is removed from the exterior, the majority of said moisture being removed by circulating air at a temperature of at least 130‹F. The dried product is substantially unpuffed and has an apparent density at least that of water.
