Abstract

[Problème] Une forte odeur de levure est détectée à partir de l'ensemble d'un aliment dans lequel une huile/graisse dérivée d'une levure du genre Lipomyces est utilisée en tant qu'huile destinée à être utilisée dans un procédé de friture. Ainsi, le but de la présente invention est d'éliminer de manière fiable l'odeur de levure d'une huile/graisse dérivée d'une levure du genre Lipomyces. [Solution] L'invention concerne un procédé de fabrication d'huile/de graisse, ledit procédé de fabrication comprenant : une étape de culture d'une levure du genre Lipomyces pour produire une huile/graisse ; une étape de collecte de l'huile/de la graisse à partir de la levure du genre Lipomyces ; et une étape de purification de l'huile/de la graisse collectée, dans l'étape de purification, un processus de désodorisation étant réalisé à 240-300 °C.
