得られた香気組成物をノンアルコールビールテイスト飲料に添加する工程;
を包含する、ノンアルコールビールテイスト飲料の製造方法を提供する。
麦汁発酵液を減圧下で噴霧することで麦汁発酵液から炭酸ガス及び香気成分を気化させる工程;
気化した香気成分を凝結させて香気組成物を得る工程;
得られた香気組成物をノンアルコールビールテイスト飲料に添加する工程;
を包含する、ノンアルコールビールテイスト飲料のビールらしい香味、及び醸造由来の複雑味を増強する方法を提供する。
本発明において、香気組成物とは、低アルコールビールテイスト飲料の香気成分である、ミルセンと、β-イオノンと、リナロールと、シトロネロールと、ゲラニオールと、α-ユーデスモールとをそれぞれ特定量で含む組成物をいう。香気組成物に含まれる香気成分の量は、低アルコールビールテイスト飲料に含有された状態における濃度として表示する。
一般に、麦芽を含む原料を酵素処理して得た糖液を麦汁という。麦汁発酵液とは、通常のビールを製造する際に使用される麦汁を発酵させて得られる液をいう。麦汁発酵液は、麦汁上面発酵液であってよく、麦汁下面発酵液であってもよい。麦汁上面発酵液とは、麦汁に上面発酵酵母を接種し、通常の発酵条件、例えば15~25℃で数日間発酵させた麦汁発酵液をいう。麦汁下面発酵液とは、麦汁に下面発酵酵母を接種し、通常の発酵条件、例えば10℃前後でおよそ一週間発酵させた麦汁発酵液をいう。
麦汁発酵液の製造方法を以下に説明する。

[式中、Pは原麦汁エキスであり、Eendは外観最終エキスである。]
本発明で使用する香気組成物は、例えば、各香気成分を所定量配合することで製造することができる。また、好ましい一形態において、香気組成物は、前記麦汁発酵液から香気成分を気化させ、これを回収して、製造することができる。
本発明の低アルコールビールテイスト飲料は、前記香気組成物を低アルコールビールテイスト飲料に所定量添加することで、製造することができる。香気組成物が配合される低アルコールビールテイスト飲料は、発酵過程を経て製造された発酵低アルコールビールテイスト飲料であっても、発酵過程を経ないで製造された非発酵低アルコールビールテイスト飲料であってもよい。
[麦汁発酵液の製造]
仕込釜に粉砕麦芽、水及びコーンスターチを投入し、70℃で糊化、100℃で液化を行った。次に仕込槽に粉砕麦芽、酵素及び温水を投入し、55℃付近でタンパク休止を行った後、仕込釜から仕込槽へ液を移送し、60℃から76℃の範囲の温度で糖化を行った。この糖化液を濾過槽であるロイターにて濾過し、その後煮沸釜に移して、ホップを添加し、60分間煮沸した。煮沸後、蒸発分の温水を追加し、ワールプール槽にて熱トルーブを除去した後、プレートクーラーを用いて10℃まで冷却し、冷麦汁を得た。この麦汁に下面発酵ビール酵母を加え、7日間10℃前後で発酵させた後、ビール酵母を除去した。タンクを移し替えて7日間熟成させた後、-1℃付近まで冷却し14日間安定化させた。その後、脱気水を加えて希釈後、珪藻土を用いて濾過し、麦汁発酵液(麦汁下面発酵液)を得た。
以下の実施例及び比較例において、リナロール、β-シトロネロール、ミルセン、ゲラニオール、β-イオノン及びα-ユーデスモールの濃度については、以下の手法により測定した。
・ガスクロマトグラフ:アジレント・テクノロジー社製6890
・検出器:MSD5973N四重極マススペクトル(Agilent Technologies社製)
・カラム:DB-WAX capillary column(長さ:60m、内径:0.25mm、膜厚:0.25μm、Agilent Technologies社製)
・注入口:250℃ パルス化スプリットレスインジェクションモード(pulsedsplitless injection mode)
・注入量:1μL
・キャリアガス:ヘリウム(1ml/min)
・カラム温度設定:40℃(5分保持)-(3℃/min)-240℃(20分)
・質量-電荷比(mass-to-charge ratio):30~350(m/z)
・イオン化条件:70eV、シングルイオン-モニタリングモード(singleion-monitoring(SIM) mode)
・定量:それぞれの香気成分のピークエリア面積と内部標準品のピークエリア面積との比較によって行った。得られた分析結果を表1に示す。
上記で得られた麦汁発酵液(液温0℃)のガス圧を0.20MPaに調整した後に、液温を熱交換器にて55~65℃に調整し、90mbar付近の減圧下で脱ガスタンク内にスプレーして、炭酸ガス及び香気成分を気化させた。気化した香気成分は、約20℃に冷却することで凝結させて、香気組成物を得た。
[香気組成物含有ノンアルコールビールテイスト飲料の製造]
脱ガスタンク内にスプレーを行う前の麦汁発酵液(液温0℃)のガス圧を0.04MPaに調整すること以外は実施例と同様にして、香気組成物含有ノンアルコールビールテイスト飲料を製造した。得られた香気組成物含有ノンアルコールビールテイスト飲料を試料2とした。試料2のアルコール度数は1%未満であった。香気成分の分析結果を表3に示す。
[香気組成物非含有ノンアルコールビールテイスト飲料の製造]
脱ガスタンク内にスプレーを行う前の麦汁発酵液(液温0℃)のガス圧を0.04MPaに調整すること、及び香気組成物を脱アルコールされた麦汁発酵液に戻さないこと以外は実施例と同様にして、香気組成物非含有ノンアルコールビールテイスト飲料を製造した。得られた香気組成物非含有ノンアルコールビールテイスト飲料を試料3とした。試料3のアルコール度数は1%未満であった。香気成分の分析結果を表4に示す。
[香気成分濃度及び種類の変更]
試料1及び試料3を、比率を変えて混合することで、香気成分の濃度が異なるノンアルコールビールテイスト飲料を1L製造し、それぞれ試料4~9とした。
前記のようにして製造したノンアルコールビールテイスト飲料を官能評価に供した。評価者は、訓練されたパネリスト6名とした。評価項目は、納豆臭の強さ、よだれ臭の強さ、焦げ臭の強さ、イモ臭の強さ、醸造由来の複雑味とした。
可「B」:納豆臭、よだれ臭、焦げ臭、イモ臭それぞれの強さの評点の平均が2.0超2.5以下かつ醸造由来の複雑味の評点の平均が3.5以上4.0未満。
不可「C」:納豆臭、よだれ臭、焦げ臭、イモ臭それぞれの強さの評点の平均が2.5超過、又は醸造由来の複雑味の評点の平均が3.5未満。
Claims (11)
- 0.0475ppb以上のミルセンと、
0.000475ppb以上のβ-イオノンと、
5.8125ppb以上のリナロールと、
0.7025ppb以上のシトロネロールと、
0.115ppb以上のゲラニオールと、
0.09ppb以上のα-ユーデスモールと、
を含む香気組成物を含む、ノンアルコールビールテイスト飲料。 - 前記香気組成物は、0.0475~1.0ppbのミルセンと、0.000475~0.010ppbのβ-イオノンと、5.8125~71.33ppbのリナロールと、0.7025~10.0ppbのシトロネロールと、0.115~1.4ppbのゲラニオールと、0.090~1.1ppbのα-ユーデスモールとを含むものである、請求項1に記載のノンアルコールビールテイスト飲料。
- 前記香気組成物の香気成分は、麦汁発酵液に由来するものである請求項1又は2に記載のノンアルコールビールテイスト飲料。
- 前記麦汁発酵液は、麦汁下面発酵液である請求項1~3のいずれか一項に記載のノンアルコールビールテイスト飲料。
- 前記麦汁発酵液は、50%以上の麦芽使用比率を有する請求項1~4のいずれか一項に記載のノンアルコールビールテイスト飲料。
- 脱アルコール麦汁発酵液を含む請求項1~5のいずれか一項に記載のノンアルコールビールテイスト飲料。
- 麦汁発酵液の炭酸ガス圧を0.05~0.25MPaに調整する工程;
麦汁発酵液を減圧下で噴霧することで麦汁発酵液から炭酸ガス及び香気成分を気化させる工程;
気化した香気成分を凝結させて香気組成物を得る工程;
得られた香気組成物をノンアルコールビールテイスト飲料に添加する工程;
を包含する、ノンアルコールビールテイスト飲料の製造方法。 - 麦汁発酵液の炭酸ガス圧を0.05~0.25MPaに調整する工程;
麦汁発酵液を減圧下で噴霧することで麦汁発酵液から炭酸ガス及び香気成分を気化させる工程;
気化した香気成分を凝結させて香気組成物を得る工程;
得られた香気組成物をノンアルコールビールテイスト飲料に添加する工程;
を包含する、ノンアルコールビールテイスト飲料のビールらしい香味、及び醸造由来の複雑味を増強する方法。 - 香気組成物が添加される前記ノンアルコールビールテイスト飲料が、麦汁発酵液を脱アルコール処理して得られたものである、請求項7又は8に記載の方法。
- 前記香気組成物が、0.0475ppb以上のミルセンと、0.000475ppb以上のβ-イオノンと、5.8125ppb以上のリナロールと、0.7025ppb以上のシトロネロールと、0.115ppb以上のゲラニオールと、0.09ppb以上のα-ユーデスモールとを、含むものである、請求項7~9のいずれか一項に記載の方法。
