The median value and the average value were obtained by scoring by relative evaluation with Comparative Example 1 according to the criteria of. The sensory evaluation was performed by a panel of 3 people. The following standard "6" corresponds to the umami taste of a 0.4% by mass monosodium glutamate aqueous solution.

Abstract
Description
・MCT:中鎖脂肪酸トリグリセリド、商品名「ココナードMT」、IV=0、花王株式会社製
・菜種油:AJINOMOTOさらさらキャノーラ油、IV=115、株式会社J-オイルミルズ社製
・β-カロテン:β-カロテン30%懸濁液(DSM製)
・アスタキサンチン:アスタキサンチンオイルAstabio AR5(バイオジェニック株式会社製)
以下に、β-カロテンの定量方法を説明する。定量は、高速液体クロマトグラフィーによる分析(HPLC分析)にて行った。具体的には、β-カロテン、β-カロテンを添加した食用油脂、又は酸化処理した油脂組成物を0.5g秤量し、アセトン:テトラヒドロフラン=1:1で10mLにそれぞれメスアップし、HPLC分析に供し、検量線からβ-カロテンの含有量を定量した。なお、検量線は定量標品としてβ-カロテン(型番035-05531)の試薬(富士フイルム和光純薬株式会社製)を使用して、所定濃度ごとにHPLC分析に供したときのピーク面積から作成した。以下に、主な分析条件を示す。
・検出器:フォトダイオドアレイ検出器「2996 PHOTODIODE ARRAY DETECTOR」(Waters社)、300~600nmで検出
・カラム:Shim-pack VP-ODS, 4.6mmID×250mm, 4.6μm(株式会社島津製作所)
・カラム温度:50℃
・注入量:5μL
・流速:1.2mL/分
・移動相A:アセトニトリル
・移動相B:エタノール
・移動相C:アセトン
・グラジエント条件:表1に示す
以下に、アスタキサンチンの定量方法を説明する。定量は、高速液体クロマトグラフィーによる分析(HPLC分析)にて行った。具体的には、アスタキサンチン、アスタキサンチンを添加した食用油脂、又は酸化処理した油脂組成物を2g秤量し、アセトンで10mLにそれぞれメスアップし、溶かしてHPLC分析に供し、検量線からアスタキサンチンの含有量を定量した。なお、検量線は定量標品としてアスタキサンチン(型番600113)(MedKoo Biosciences社製)の試薬を使用して、所定濃度ごとにHPLC分析に供したときのピーク面積から作成した。以下に、主な分析条件を示す。
・検出器:フォトダイオドアレイ検出器「2996 PHOTODIODE ARRAY DETECTOR」(Waters社)、400~600nmで検出
・カラム:YMC Carotenoid, 4.6mmID×250mm, 5μm(株式会社ワイエムシィ)
・カラム温度:25℃
・注入量:10μL
・流速:1.0mL/分
・移動相A:メタノール
・移動相B:tert-ブチルメチルエーテル
・移動相C:超純水
・グラジエント条件:表2に示す。
ベース油のIVは「基準油脂分析試験法 2.3.4 ヨウ素価」(日本油化学会)に則って測定した。
表3に示す配合で、各種の油脂組成物を調製した。具体的には、カロテノイド(β-カロテン又はアスタキサンチン)を所定含有量(質量ppm)となるようベース油に添加し、合計240gになるようにして、これを撹拌しながら表3に示される各加熱処理条件で加熱処理して、実施例1~6の油脂組成物を得た。実施例2以外は空気(200mL/分)の供給を行いながら処理した。なお、加熱処理を行わない比較例1として、中鎖脂肪酸トリグリセリド(MCT)にβ-カロテンを53質量ppmの含有量となるよう添加して、緩く撹拌することにより混合し、それ以外の加熱等の処理を行わないで油脂組成物を調製した。また、実施例5においてベース油とした菜種油にβ-カロテンを添加しないものを比較例2とした。
グルタミン酸ナトリウム1gを499gの水に溶解して、グルタミン酸ナトリウムを0.2質量%含有するうま味水溶液Aを調製した。

表5の上段に示す配合で、比較例1、実施例3,6、比較例2の油脂組成物をうま味水溶液に添加した以外は、試験例1と同じ方法で、うま味増強効果を評価した。
市販のうま味調味料(「味の素」(登録商標)、味の素株式会社)1gを499gの水に溶解して、そのうま味調味料を0.2質量%含有するうま味水溶液Bを調製した。
核酸系うま味成分である5’-リボヌクレオタイドナトリウム(5’-イノシン酸二ナトリウムと5’-グアニル酸二ナトリウムの混合物)(製品名:リボタイド、三菱商事ライフサイエンス株式会社)1gを499gの水に溶解して、その核酸系うま味成分を0.2質量%含有するうま味水溶液Cを調製した。
市販の粉末鶏がらスープ(商品名「丸鶏がらスープ」、味の素株式会社)4.17gを495.83gの水に溶解して、その粉末鶏がらスープを0.83質量%含有するうま味水溶液Dを調製した。
市販の粉末かつおだし(「ほんだし」(登録商標)、味の素株式会社)3.33gを496.67gの水に溶解して、その粉末かつおだしを0.67質量%含有するうま味水溶液Eを調製した。
市販の粉末こんぶだし(「ほんだし」(登録商標)こんぶだし、味の素株式会社)3.33gを496.67gの水に溶解して、その粉末こんぶだしを0.67質量%含有するうま味水溶液Fを調製した。
固形状コンソメ(商品名「味の素KKコンソメ」、味の素株式会社)4.17gを495.83gの水に溶解して、その固形状コンソメを0.83質量%含有するうま味水溶液Gを調製した。
ポークエキス(製品名:ポークストック50-10-N、DSP五協フード&ケミカル株式会社)6gを494gの水に溶解して、そのポークエキスを1.2質量%含有するうま味水溶液Hを調製した。
ビーフエキス(製品名:アジポールビーフUP、DSP五協フード&ケミカル株式会社)6gを494gの水に溶解して、そのビーフエキスを1.2質量%含有するうま味水溶液Iを調製した。
酵母エキス(製品名:アロマイルド、DSP五協フード&ケミカル株式会社)6gを494gの水に溶解して、その酵母エキスを1.2質量%含有するうま味水溶液Jを調製した。
昆布20gを水1000gに入れ、中火で沸騰する直前まで加熱した後、昆布を取り除いて昆布だしを調製した。
Claims (14)
- カロテノイド分解物を有効成分とする、うま味増強用組成物。
- 前記カロテノイド分解物は、カロテン及びキサントフィルからなる群から選ばれた1種又は2種以上の分解物である、請求項1記載のうま味増強用組成物。
- 前記うま味増強用組成物は、前記カロテノイド分解物を、分解前の状態のカロテノイド量に換算して1×10-6質量ppm以上100000質量ppm以下含有する、請求項1又は2記載のうま味増強用組成物。
- 食用油脂組成物の形態である、請求項1乃至3のいずれか一項に記載のうま味増強用組成物。
- 請求項1乃至4のいずれか一項に記載のうま味増強用組成物を含む、調味料又はエキス。
- 食用油脂にカロテノイドを添加する工程と、前記食用油脂中の前記カロテノイドを分解する工程を含む、うま味増強用組成物の製造方法。
- 前記カロテノイドの分解は、50℃以上220℃以下で0.1時間以上240時間以下加熱処理することにより行う、請求項6記載のうま味増強用組成物の製造方法。
- 前記加熱処理は、酸素を供給して行う、請求項7記載のうま味増強用組成物の製造方法。
- 前記食用油脂に前記カロテノイドを1質量ppm以上100000質量ppm以下添加する、請求項6乃至8のいずれか一項に記載のうま味増強用組成物の製造方法。
- 前記カロテノイドは、カロテン及びキサントフィルからなる群から選ばれた1種又は2種以上である、請求項6乃至9のいずれか一項に記載のうま味増強用組成物の製造方法。
- 前記食用油脂中で前記カロテノイドを分解する工程を経た後に、更に、新たな食用油脂と混合する工程を含む、請求項6乃至10のいずれか一項に記載のうま味増強用組成物の製造方法。
- 請求項6乃至11のいずれか一項に記載の製造方法で得られたうま味増強用組成物と、うま味成分とを混合する工程を含む、調味料又はエキスの製造方法。
- 請求項1乃至4のいずれか一項に記載のうま味増強用組成物を食品に付与する、食品のうま味増強方法。
- 前記食品中に、前記カロテノイド分解物を、分解前の状態のカロテノイド量に換算して1×10-8質量ppm以上100質量ppm以下含有せしめる、請求項13記載の食品のうま味増強方法。
