Abstract

A presente invenção se insere no campo dos produtos alimentícios, mais especificamente, produtos de laticínios e produção dos mesmos, e descreve o processo de obtenção de gordura anidra do leite totalmente hidrogenada (GALTH) a partir de leite integral de ruminantes. Também são objetos dessa invenção a gordura anidra do leite totalmente hidrogenada (GALTH) obtida e o seu uso em produtos alimentícios, na produção de chocolate ao leite, que utiliza obrigatoriamente, gordura do leite em sua composição, cosméticos e farmacêuticos. Sua adição na formulação do chocolate ao leite, em substituição à gordura do leite normalmente utilizada, resulta em um produto com maior estabilidade térmica, que não derrete nas temperaturas usuais de armazenamento e comercialização e que não apresenta fat bloom durante o armazenamento.
