Abstract
Description
特許文献1(特開2008-92941号公報)には、湿熱処理した小麦粉であって、α化度および粘度がそれぞれ特定の範囲にあるベーカリー類用湿熱処理小麦粉について記載されている。同文献によれば、かかる小麦粉を用いることにより、ベーカリー類の製品ボリュームを向上させ、内層のキメが細かく、柔らかく、しっとり感および口溶け感に優れ、更に、常温、チルドまたは冷凍保存後の電子レンジ調理などの再加熱調理においても、乾燥によるパサツキや澱粉の老化によるボソツキを抑制し、製造直後の食感を保持できる、いいかえれば経時変化耐性に優れた、ベーカリー類が得られる、ベーカリー類用湿熱処理小麦粉、該小麦粉を用いたベーカリー類用ミックスおよびベーカリー類を提供することができるとされている。
以下の条件(1)~(5)を満たす成分(A)を有効成分として含む、スポンジケーキ用改良剤が提供される。
(1)澱粉含量が75質量%以上

スポンジケーキのパサつきを抑制する方法であって、以下の条件(1)~(5)を満たす成分(A)を前記スポンジケーキの生地に含有させることを含む、前記方法が提供される。
(1)澱粉含量が75質量%以上
(2)アミロース含量5質量%以上である澱粉の低分子化澱粉を3質量%以上45質量%以下含み、前記低分子化澱粉のピーク分子量が3×103以上5×104以下

スポンジケーキにホイップクリームをコーティングしたデコレーションケーキのクリームとスポンジケーキの口どけのバランスを向上させる方法であって、以下の条件(1)~(5)を満たす成分(A)を前記スポンジケーキの生地に含有させることを含む、前記方法が提供される。

たとえば、本発明には、上記本発明におけるスポンジケーキ用改良剤の、スポンジケーキ用ミックス粉、スポンジケーキ用生地またはスポンジケーキの製造方法への使用も包含される。
また、本発明には、上記本発明におけるスポンジケーキ用ミックス粉またはスポンジケーキ用生地の、スポンジケーキおよびその製造方法への使用も包含される。
本実施形態において、スポンジケーキ用改良剤は、以下の条件(1)~(5)を満たす成分(A)を有効成分として含む。
(1)澱粉含量が75質量%以上
(2)アミロース含量5質量%以上である澱粉の低分子化澱粉を3質量%以上45質量%以下含み、前記低分子化澱粉のピーク分子量が3×103以上5×104以下
(3)25℃における冷水膨潤度が5以上20以下
(4)目開き0.25mmの篩の篩下の含有量が80質量%以上100質量%以下
(5)目開き0.5mmの篩の篩上の含有量が10質量%以下
生地比重の測定方法は、限定されず、一般に用いられる方法でよいが、たとえばあらかじめ重さを測った容量100mLのプラスチックカップ等に、生地をすり切りで入れ、質量を測定して、算出することができる。
以下、成分(A)についてさらに具体的に説明する。
成分(A)は、具体的には、澱粉を主成分としてなる粉状物である。
条件(1)に関し、成分(A)は、スポンジケーキの保存後の口どけを向上する観点から、澱粉を75質量%以上含み、好ましくは80質量%以上、さらに好ましくは85質量%以上含む。
また、成分(A)中の澱粉含量の上限に制限はなく、100質量%以下であるが、スポンジケーキの性状等に応じて99.5質量%以下、99質量%以下等としてもよい。
まず、原料であるアミロース含量5質量%以上の澱粉と水を反応装置に投入した後、さらに酸を投入する。あるいは水に無機酸をあらかじめ溶解させた酸水と原料の澱粉を反応装置に投入する。酸処理をより安定的におこなう観点からは、反応中の澱粉の全量が水相内に均質に分散した状態、またはスラリー化した状態にあることが望ましい。そのためには、酸処理をおこなう上での澱粉スラリーの濃度を、たとえば10質量%以上50質量%以下、好ましくは20質量%以上40質量%以下の範囲になるように調整する。スラリー濃度が高すぎると、スラリー粘度が上昇し、均一なスラリーの攪拌が難しくなる場合がある。
一方、成分(A)中の低分子化澱粉の含有量の上限は、同様の観点から、45質量%以下であり、好ましくは35質量%以下、さらに好ましくは25質量%以下である。
まず、条件(3)に関し、スポンジケーキの保存後のパサつきを抑制する観点から、成分(A)の冷水膨潤度は5以上であり、好ましくは6以上であり、さらに好ましくは6.5以上である。
また、スポンジケーキの保存後の口どけを向上する観点、および、スポンジケーキにホイップクリームをコーティングした際のクリームとスポンジケーキの口どけのバランスを向上させる観点から、成分(A)の冷水膨潤度は20以下であり、好ましくは17以下、さらに好ましくは15以下であり、さらにより好ましくは10.0以下である。
ここで、成分(A)の冷水膨潤度の測定方法については、実施例の項に記載する。
条件(4)に関し、目開き0.25mmの篩の篩下の粒子の含有量は、スポンジケーキの保存後の口どけを向上しパサつきを抑制する観点、および、スポンジケーキにホイップクリームをコーティングした際のクリームとスポンジケーキの口どけのバランスを向上させる観点から、成分(A)全体に対して80質量%以上であり、好ましくは85質量%以上、さらに好ましくは90質量%以上、よりいっそう好ましくは95質量%以上である。さらにまた好ましくは、成分(A)は、目開き0.25mmの篩の篩下の粒子の含有量が100質量%である。
また、目開き0.25mmの篩の篩下の粒子の含有量の上限に制限はなく、100質量%以下である。
また、成分(A)が目開き0.5mmの篩の篩上の粒子の含有量に下限はなく、0質量%以上である。
澱粉以外の成分の具体例としては、色素や炭酸カルシウム、硫酸カルシウムなどの不溶性塩が挙げられ、不溶性塩を配合することが好ましく、不溶性塩の配合量は、0.1質量%以上2質量%以下であることがより好ましい。
(低分子化澱粉の調製工程)アミロース含量5質量%以上の澱粉を低分子化処理してピーク分子量が3×103以上5×104以下の低分子化澱粉を得る工程。
(造粒工程)原料に低分子化澱粉を3質量%以上45質量%以下含み、かつ低分子化澱粉と低分子化澱粉以外の澱粉の合計が75質量%以上である、原料を加熱糊化して造粒する工程。
エクストルーダー処理する場合は通常、澱粉を含む原料に加水して水分含量を10~60質量%程度に調整した後、たとえばバレル温度30~200℃、出口温度80~180℃、スクリュー回転数100~1,000rpm、熱処理時間5~60秒の条件で、加熱膨化させる。
また、加熱糊化して得られた造粒物を、必要に応じて、粉砕し、篩い分けをし、大きさを適宜調整して、条件(4)および(5)を満たす成分(A)を得るとよい。
たとえば、本実施形態において、スポンジケーキのパサつきを抑制する方法は、成分(A)をスポンジケーキの生地に含有させることを含む。
ここで、スポンジケーキのパサつきとは、具体的には、スポンジケーキが乾燥し、かつ硬くなり、しっとりしていない状態をいう。本実施形態において、成分(A)は、外表面が被覆されていないスポンジケーキのパサつきの抑制に用いることもできるし、デコレーションケーキのように外表面が被覆されたスポンジケーキのパサつきの抑制に用いることもできるが、好ましくは外表面が被覆されたスポンジケーキのパサつきの抑制に用いられ、より好ましくはホイップクリームまたはチョコレートでコーティングされたスポンジケーキのパサつきの抑制に用いられる。
また、スポンジケーキのパサつきは、好ましくは10℃以下の温度で生じるものであり、より好ましくは0℃超10℃以下の温度で生じるものである。また、スポンジケーキのパサつきが、たとえば10℃超50℃以下、好ましくは10℃超35℃以下の温度で生じるものであってもよい。
ここで、デコレーションケーキのクリームとスポンジケーキの口どけのバランスを向上させるとは、スポンジケーキが口残りしないことで、ホイップクリームを邪魔せず、際立たせることをいう。さらに具体的には、スポンジケーキに成分(A)を用いると、デコレーションケーキのクリームとスポンジケーキとの口どけのタイミングが良好で一体感のある食感となり、その結果クリームとスポンジケーキの口どけのバランスを向上させることとなる。
本実施形態において、成分(A)を有効成分とするスポンジケーキ用改良剤を配合してスポンジケーキを得ることにより、スポンジケーキの口どけを向上しパサつきを抑制することができ、また、スポンジケーキがホイップクリームでデコレーションされた際のクリームとスポンジケーキの口どけのバランスを向上させることができる。また、これらの好ましい食感や風味を保存後も得ることができる。
また、スポンジケーキ用改良剤中の成分(A)の含有量の上限に制限はなく、100質量%以下であるが、たとえば99質量%以下であってもよい。
スポンジケーキ用改良剤が成分(A)以外の成分を含むとき、成分(A)以外の成分として、具体的には、澱粉、穀粉、糖類が挙げられる。
本実施形態において、スポンジケーキ用生地は、成分(A)と、成分(A)以外の粉体原料とを含む。
粉体原料は、スポンジケーキ用生地に粉状の形態で配合される原料であって、成分(A)以外の原料である。粉体原料の具体例として、小麦粉、大豆粉等の穀粉;グルテン、大豆蛋白質等の蛋白質;砂糖、果糖、ブドウ糖、異性化糖、転化糖、オリゴ糖、澱粉、デキストリン、トレハロース、糖アルコール(マルチトール、エリスリトール、ソルビトール、キシリトール、ラクチトール等)等の糖類;アスパルテーム、アセスルファムカリウム、アドバンテーム、スクラロース、アリテーム、ネオテーム、サッカリン、ステビア抽出物等の粉末状の甘味料;ふすま、セルロース、難消化性デキストリン等の食物繊維;ベーキングパウダー等の膨張剤;脱脂粉乳、全脂粉乳、チーズパウダー等の乳類;卵白粉、全卵粉などの卵類;グアーガム、アルギン酸エステル等の増粘多糖類;乳化剤;ココアパウダー、抹茶パウダー等の風味付与素材;香料および風味改善剤が挙げられる。製造安定性に優れるスポンジケーキを得る観点から、粉体原料は好ましくは穀粉を含み、さらに好ましくは小麦粉を含む。
また、保存後のスポンジケーキの口どけを向上する観点から、スポンジケーキ用生地中の粉体原料および成分(A)の含有量の合計に対する成分(A)の含有量は、好ましくは25質量%以下であり、より好ましくは20質量%以下、さらに好ましくは16質量%以下、さらにより好ましくは12質量%以下であり、よりいっそう好ましくは10質量%以下、殊更好ましくは8質量%以下、さらにまた好ましくは6質量%以下である。
また、ロールケーキの場合、スポンジケーキ部分のパサつきの抑制および口どけの向上の観点、ならびに、ホイップクリームでデコレーションされているときのホイップクリームとスポンジケーキの口どけのバランスの向上の観点から、生地中の粉体原料および成分(A)の含有量の合計に対する成分(A)の含有量は、好ましくは0.3質量%以上25質量%以下であり、より好ましくは0.5質量%以上20質量%以下、さらに好ましくは1.0質量%以上16質量%以下、さらにまた好ましくは2.0質量%以上16質量%以下である。
ここで、本明細書中、「粉体原料および成分(A)の含有量の合計」とは、成分(A)と成分(A)以外の粉体原料との合計のことである。
また、保存後のスポンジケーキの口どけを向上する観点から、スポンジケーキ用生地中の穀粉および成分(A)の含有量の合計に対する成分(A)の含有量は、好ましくは40質量%以下であり、より好ましくは33質量%以下、さらに好ましくは27質量%以下、さらにまた好ましくは15質量%以下、よりいっそう好ましくは12質量%以下である。
また、ロールケーキの場合、スポンジケーキ部分のパサつきの抑制および口どけの向上の観点、ならびに、ホイップクリームでデコレーションされているときのホイップクリームとスポンジケーキの口どけのバランスの向上の観点から、生地中の穀粉および成分(A)の含有量の合計に対する成分(A)の含有量は、好ましくは1質量%以上40質量%以下であり、より好ましくは2質量%以上33質量%以下、さらに好ましくは4質量%以上27質量%以下である。
本実施形態において、スポンジケーキ用ミックス粉は、成分(A)と、粉体原料の一部または全部と、を含む。粉体原料の具体例として、それぞれ、スポンジケーキ用生地に配合される穀粉および糖類として例示したものを用いることができる。
さらに具体的には、本実施形態において、スポンジケーキ用ミックス粉は、成分(A)と、穀粉および糖類からなる群から選ばれる1種または2種と、を含む。穀粉および糖類の具体例として、それぞれ、スポンジケーキ用生地に配合される穀粉および糖類として例示したものを用いることができる。
また、保存後のスポンジケーキの口どけを向上する観点から、スポンジケーキ用ミックス粉中の成分(A)の含有量は、スポンジケーキ用ミックス粉全体に対して好ましくは50質量%以下であり、より好ましくは35質量%以下、さらに好ましくは20質量%以下、さらにより好ましくは12質量%以下、よりいっそう好ましくは10質量%以下、殊更好ましくは8質量%以下、さらにまた好ましくは6質量%以下である。
また、ロールケーキの場合、スポンジケーキ部分のパサつきの抑制および口どけの向上の観点、ならびに、ホイップクリームでデコレーションされているときのホイップクリームとスポンジケーキの口どけのバランスの向上の観点から、スポンジケーキ用ミックス粉中の成分(A)の含有量は、スポンジケーキ用ミックス粉全体に対して好ましくは0.3質量%以上50質量%以下であり、より好ましくは0.5質量%以上35質量%以下、さらに好ましくは1.0質量%以上20質量%以下である。
本実施形態において、スポンジケーキは、成分(A)と、成分(A)以外の粉体原料とを含む。粉体原料としては、スポンジケーキ用生地に配合される粉体原料として例示したものを用いることができる。
また、保存後のスポンジケーキの口どけを向上する観点から、スポンジケーキ中の粉体原料および成分(A)の含有量の合計に対する成分(A)の含有量は、好ましくは25質量%以下であり、より好ましくは20質量%以下、さらに好ましくは16質量%以下、さらにより好ましくは12質量%以下であり、よりいっそう好ましくは10質量%以下、殊更好ましくは8質量%以下、さらにまた好ましくは6質量%以下である。
また、ロールケーキの場合、スポンジケーキ部分のパサつきの抑制および口どけの向上の観点、ならびに、ホイップクリームでデコレーションされているときのホイップクリームとスポンジケーキの口どけのバランスの向上の観点から、スポンジケーキ中の粉体原料および成分(A)の含有量の合計に対する成分(A)の含有量は、好ましくは0.3質量%以上25質量%以下であり、より好ましくは0.5質量%以上20質量%以下、さらに好ましくは1.0質量%以上16質量%以下、さらにまた好ましくは2.0質量%以上16質量%以下である。
また、本実施形態において、デコレーションケーキは、たとえば、本実施形態におけるスポンジケーキを準備する工程;およびスポンジケーキに、コーティングする工程を含む、製造方法により得ることができる。また、デコレーションケーキの製造方法は、コーティングする上記工程の後、10℃以下、さらに好ましくは0℃超10℃以下の温度で保存する工程を含んでもよい。また、デコレーションケーキの製造方法は、コーティングする上記工程の後、50℃以下、さらに好ましくは10℃超35℃以下の温度で保存する工程を含んでもよい。
コーティングは、デコレーションケーキの側面または上面の一部に施されてもよいし、全体に施されてもよいが、保存後のスポンジケーキの口どけを向上し、パサつきを抑制する観点、および、スポンジケーキにホイップクリームをコーティングした際のクリームとスポンジケーキの口どけのバランスを向上させる観点から、デコレーションケーキの側面および上面の全体にわたって施されていることが好ましい。ここで、ロールケーキのようにホイップクリームがスポンジケーキの内側にコーティングされたもの、あるいは、スポンジケーキがホイップクリームを包むものも、本実施形態におけるコーティングの一態様である。
また、コーティングの厚さは、コーティングの種類により適宜調整できるが、保存後のスポンジケーキの口どけを向上し、パサつきを抑制する観点、および、スポンジケーキにホイップクリームをコーティングした際のクリームとスポンジケーキの口どけのバランスを向上させる観点から、好ましくは1mm以上であり、また、たとえば10mm以下であってもよい。
また、本実施形態におけるスポンジケーキにコーティングして得られるデコレーションケーキについても、スポンジケーキ部分に有効成分として成分(A)を含むため、同様に、保存後のスポンジケーキの口どけに優れるとともに、パサつきが抑制されたものとすることができる。また、ホイップクリームでコーティングされたデコレーションケーキでは、クリームとスポンジケーキの口どけのバランスを向上させることができる。
また、本実施形態によれば、たとえば、4℃にて1日以上または3日以上保存後のスポンジケーキの口どけを向上し、パサつきを抑制することも可能となる。
また、本実施形態によれば、たとえば、常温(20℃)にてたとえば1日以上または5日以上保存後のスポンジケーキの口どけを向上し、パサつきを抑制することも可能となる。

本例では、低分子化澱粉として酸処理澱粉を用いて澱粉粉状物を得た。
ハイアミロースコーンスターチを水に懸濁して35.6%(w/w)スラリーを調製し、50℃に加温した。そこへ、攪拌しながら4.25Nに調製した塩酸水溶液をスラリー質量比で1/9倍量加え反応を開始した。16時間反応後、3%NaOHで中和し、水洗、脱水、乾燥し、酸処理ハイアミロースコーンスターチを得た。
得られた酸処理ハイアミロースコーンスターチのピーク分子量を以下の方法で測定したところ、ピーク分子量は1.2×104であった。
ピーク分子量の測定は、東ソー株式会社製HPLCユニットを使用しておこなった(ポンプDP-8020、RI検出器RS-8021、脱気装置SD-8022)。
(1)試料を粉砕し、JIS-Z8801-1規格の篩で、目開き0.15mm篩下の画分を回収した。この回収画分を移動相に1mg/mLとなるように懸濁し、懸濁液を100℃3分間加熱して完全に溶解した。0.45μmろ過フィルター(ADVANTEC社製、DISMIC-25HP PTFE 0.45μm)を用いてろ過をおこない、ろ液を分析試料とした。
(2)以下の分析条件で分子量を測定した。
カラム:TSKgel α-M(7.8mmφ、30cm)(東ソー株式会社製)2本
流速:0.5mL/min
移動相:5mM NaNO3含有90%(v/v)ジメチルスルホキシド溶液
カラム温度:40℃
分析量:0.2mL
(3)検出器データを、ソフトウェア(マルチステーションGPC-8020modelIIデータ収集ver5.70、東ソー株式会社製)にて収集し、分子量ピークを計算した。
検量線には、分子量既知のプルラン(Shodex Standard P-82、昭和電工株式会社製)を使用した。
β澱粉(コーンスターチ)79質量%、上述の方法で得られた酸処理ハイアミロースコーンスターチ20質量%、および、炭酸カルシウム1質量%を充分に均一になるまで袋内で混合した。2軸エクストルーダー(幸和工業社製KEI-45)を用いて、混合物を加圧加熱処理した。処理条件は、以下の通りである。
原料供給:450g/分
加水:17質量%
バレル温度:原料入口から出口に向かって50℃、70℃および100℃
出口温度:100~110℃
スクリューの回転数250rpm
このようにしてエクストルーダー処理により得られた加熱糊化物を110℃にて乾燥し、水分含量を約10質量%に調整した。
(1)試料を、水分計(研精工業株式会社、型番MX-50)を用いて、125℃で加熱乾燥させて水分測定し、得られた水分値から乾燥物質量を算出した。
(2)この乾燥物質量換算で試料1gを25℃の水50mLに分散した状態にし、30分間25℃の恒温槽の中でゆるやかに撹拌した後、3000rpmで10分間遠心分離(遠心分離機:日立工機社製、日立卓上遠心機CT6E型;ローター:T4SS型スイングローター;アダプター:50TC×2Sアダプタ)し、沈殿層と上澄層に分けた。
(3)上澄層を取り除き、沈殿層質量を測定し、これをB(g)とした。
(4)沈殿層を乾固(105℃、恒量)したときの質量をC(g)とした。
(5)BをCで割った値を冷水膨潤度とした。
本例では、製造例1で得られた澱粉粉状物1~4からなるスポンジケーキ用改良剤を用いてスポンジケーキおよびデコレーションケーキの製造ならびに評価をおこなった。実験例1では、実施例1-1~1-3および比較例1-1について、対照例1に基づき評価した。実験例2では、実施例2-1~2-3について、対照例2に基づき評価した。また、実験例3では、実施例3-1および比較例3について、対照例3に基づき評価した。
実験例1~3における各例の配合および評価結果を、それぞれ、表2~表4に示す。なお、表2~表4および後述する表5~表7において、(澱粉粉状物/(粉体原料+澱粉粉状物))および(澱粉粉状物/(穀粉+澱粉粉状物))の単位は、いずれも、質量%である。
また、表2~表4および後述する表5~表7において、「粉体原料+澱粉粉状物」とは、澱粉粉状物と澱粉粉状物以外の粉体原料との合計である。
1.原材料のうち、薄力粉、澱粉粉状物、砂糖およびベーキングパウダーをビニール袋に入れ混ぜ合わせ、ミックス粉を作製した。対照例では、薄力粉、砂糖およびベーキングパウダーをビニール袋に入れ混ぜ合わせてミックス粉を得た。
2.全卵、各油脂製品および上記1.で得られたミックス粉をボウルに入れ、ホイッパーを取り付けたホバートミキサーで中速にて比重が0.40~0.43になるようにミキシングした。
3.ミキシング後の生地280gを、6号丸型に入れ、オーブンにて以下の条件で焼成した。
焼成条件:上段180℃/下段180℃
焼成時間:27分
各実施例、比較例、対照例(ただし、実施例3-1、比較例3および対照例3を除く。)については、以下の方法で生クリームをデコレーションし、各例の生クリームデコレーションケーキを得た。
1.生クリーム1パックをボウルに入れ、上白糖8gを加えて、ミキサーの中速でホイップし、8分立てのホイップクリームを得た。
2.焼成後の各例のスポンジケーキを、水平方向に2枚にカットし、カットした片面に上記ホイップクリームをパレットナイフで2~3mmの厚さで均等に塗った。
3.上記2.でクリームを塗ったスポンジケーキの面を重ね合わせ、上面及び側面に、ホイップクリームをパレットナイフで2~3mmの厚さで均等に塗り、デコレーションケーキを得た。
4.得られたデコレーションケーキをケーキ用紙箱(寸法:220×220×118mm)に入れ、4℃で3日間保管した。
5.ケーキを箱から取り出し、8等分して喫食し、評価をおこなった。
また、実施例3-1、比較例3および対照例3については、以下の方法でチョコレートをコーティングし、各例のチョコレートデコレーションケーキを得た。
(チョコレートデコレーションケーキの製造方法)
1.チョコレート200gをナイフで細かく削りボウルに入れ、60℃のお湯で湯せんして溶解させ、コーティング用チョコレートを得た。
2.焼成後のスポンジケーキの、底面を除く全面に、上記コーティング用チョコレートをパレットナイフで2~3mmの厚さで均等に塗り、チョコレートデコレーションケーキを得た。
3.得られたチョコレートデコレーションケーキをケーキ用紙箱(寸法:220×220×118mm)に入れ、4℃で3日間保管した。
4.ケーキを箱から取り出し、8等分して喫食し、評価をおこなった。
各例で得られたデコレーションケーキを冷蔵(4℃)にて3日間保存した。そして、保存後の対照例に対する保存後の各例のデコレーションケーキにおけるスポンジケーキのパサつき度合、スポンジケーキ部分の口どけを評価した。また、クリームでコーティングした例についてはホイップクリームとスポンジケーキの口どけのバランスをあわせて評価した。
評価は、実験例1および2では、専門パネラー5名の評点の平均値を算出しておこなった。各項目とも、保存後の対照例を3点とし、1点~5点の範囲で採点し、3点超を合格とした。実験例3~5では専門パネラー3名の合議により評価した。なお、評価結果が各評価の中間に位置する場合はその中間の値を評点とした。たとえば4と5の間の評価だった場合には、4.5とした。
各項目の評価基準は以下の通りである。
5点:非常にしっとりしている
4点:しっとりしている
3点:ややパサつく(対照例と同等)
2点:パサつく
1点:かなりパサつく
5点:口どけが非常に良く、全くネチャつきがない
4点:口どけが良く、ほとんどネチャつきがない
3点:口どけがあまり良くなく、少しネチャつく(対照例と同等)
2点:口どけが良くなく、ややネチャつく
1点:口どけが悪く口残りがあり、かなりネチャつく
5点:ホイップクリームとスポンジケーキの口どけのバランスが非常に良い
4点:ホイップクリームとスポンジケーキの口どけのバランスが良い
3点:ホイップクリームとスポンジケーキの口どけのバランスがあまり良くない(対照例と同等)
2点:ホイップクリームとスポンジケーキの口どけのバランスが悪い
1点:ホイップクリームとスポンジケーキの口どけのバランスが非常に悪い
スポンジケーキ部分の口どけ、および、ホイップクリームとスポンジケーキの口どけのバランスについては、澱粉粉状物2~4をそれぞれ含む実施例1-1~1-3のいずれも好ましく、澱粉粉状物2および3をそれぞれ含む実施例1-1および1-2がより好ましく、中でも澱粉粉状物3を含む実施例1-2が非常に好ましかった。
一方、比較例1の、250μm篩上が60質量%である澱粉粉状物1を含んだデコレーショケーキでは、各実施例のものに比べてスポンジケーキの口残りがあり、口どけ、およびホイップクリームとスポンジケーキの口どけのバランスがあまり良くなかった。
また、パサつきについては、(澱粉粉状物/(穀粉+澱粉粉状物))が3.0質量%以上10.0質量%以下である実施例2-1~2-3のいずれも良好であり、10.0質量%である実施例2-3が最もしっとりとして良好であった。口どけについては、(澱粉粉状物/(穀粉+澱粉粉状物))が3.0質量%以上10.0質量%以下である実施例2-1~2-3のいずれも良好な口どけであった。ホイップクリームとスポンジケーキの口どけのバランスについては、(澱粉粉状物/(穀粉+澱粉粉状物))が3.0質量%以上10.0質量%以下である実施例2-1~2-3のいずれも良好であり、5.0質量%以上10.0質量%以下である実施例2-2および2-3がとりわけ良好であった。
本例では、シフォンケーキを作製し、評価をおこなった。具体的には、実施例4-1について、対照例4に基づき評価した。各例における配合および評価結果を表5に示す。
1.原材料のうち、薄力粉、澱粉粉状物、砂糖、脱脂粉乳およびベーキングパウダーをビニール袋に入れ混ぜ合わせ、ミックス粉を作製した。対照例では、薄力粉、砂糖、脱脂粉乳およびベーキングパウダーをビニール袋に入れ混ぜ合わせてミックス粉を得た。
2.各油脂製品、全卵および上記1.で得られたミックス粉をボウルに入れ、ホイッパーを取り付けたホバートミキサーで中速にて比重が0.49~0.51になるようにミキシングした。
3.ミキシング後の生地410gを、直径20cmのシフォン型に入れ、オーブンにて以下の条件で焼成した。
焼成条件:上段180℃/下段180℃
焼成時間:30分
4.焼成後のシフォンケーキを型から取出し、(デコレーションケーキの製造方法)と同じ方法で作製したホイップクリームを、ケーキの底面を除く全面に厚さが5mm程度になるよう塗り、デコレーションシフォンケーキを得た。
5.得られたデコレーションシフォンケーキをシフォンケーキ用紙箱(寸法:256×256×155mm)に入れ、4℃で3日間保管した。
6.ケーキを箱から取り出し、8等分して喫食し、評価をおこなった。
成分(A)として澱粉粉状物2を用いた。澱粉粉状物2を40gと薄力粉460gとを混合し、本例のミックス粉を得た。
本例では、ロールケーキを作製し、評価をおこなった。具体的には、実施例5-1および実施例5-2について、対照例5に基づき評価した。各例における配合および評価結果を表6に示す。
(オールインミックス製法によるスポンジケーキの製造方法)
1.原材料のうち、澱粉粉状物およびベーキングパウダーをあらかじめ混合し、スポンジケーキ用改良剤を作製しておいた。
2.薄力粉、砂糖をビニール袋に入れ混ぜ合わせ、そこに1.で作製したスポンジケーキ用改良剤をさらに加えミックス粉を得た。対照例では、薄力粉、砂糖およびベーキングパウダーをビニール袋に入れ混ぜ合わせてミックス粉を得た。
3.その他の原料および上記2.で得られたミックス粉をボウルに入れ、ホイッパーを取り付けたホバートミキサーで中速にて比重が0.32~0.36になるようにミキシングした。
4.ミキシング後の生地550gを、8取天板(寸法:350×400mm)に入れ、オーブンにて以下の条件で焼成した。
焼成条件:上段180℃/下段180℃
焼成時間:12分
実施例5-1、実施例5-2および対照例5について、以下の方法でホイップクリームを作製し、絞り出し、各例の生クリームロールケーキを得た。
1.生クリーム1パックをボウルに入れ、上白糖16gを加えて、ミキサーの中速でホイップし、8分立てのホイップクリームを得た。
2.焼成後の各例のスポンジケーキに上記ホイップクリームをパレットナイフで5~6mmの厚さで均等に塗った。
3.上記2.でクリームを塗ったスポンジケーキの面を内側に巻き込んで筒状に成形しロールケーキを得た。
4.得られたロールケーキをビニールの包装用袋(寸法:100×100mm)に入れシーラーで口を閉じて、4℃で3日間保管した。
5.ケーキを袋からから取り出し、喫食し、前述のデコレーションケーキの評価方法に従い、専門パネラー3名の合議にて評価をおこなった。
実験例5の手順に従い、スポンジケーキを作製した。このスポンジケーキを縦22cm、横2.2cmにカットし、紙製カップケーキ型(サイズ:底径75×高さ22.5mm)の内側に輪を描くように置き、中心の開いたところに実験例5と同じ手法で得られたホイップクリームを25g絞り出し、ロールケーキを得た。このロールケーキをビニールの包装用袋(寸法:100×100mm)に入れシーラーで口を閉じて、4℃で3日間保管後、喫食したところ、パサつきが抑制され、スポンジ部分の口どけが良好で、ホイップクリームとスポンジケーキの口どけのバランスにも優れていた。
本例では、スポンジケーキを以下の方法で作製した。各例における原材料および配合を表7に示す。
1.原材料のうち、薄力粉、澱粉粉状物、砂糖およびベーキングパウダーをビニール袋に入れ混ぜ合わせ、ミックス粉を作製した。対照例では、薄力粉、砂糖およびベーキングパウダーをビニール袋に入れ混ぜ合わせてミックス粉を得た。
2.全卵、各油脂製品、液糖および上記1.で得られたミックス粉をボウルに入れ、ホイッパーを取り付けたホバートミキサーで中速にて比重が0.40~0.43になるようにミキシングした。
3.ミキシング後の生地280gを、6号丸型に入れ、オーブンにて以下の条件で焼成した。
焼成条件:上段180℃/下段180℃
焼成時間:27分
4.完全に冷ました後、ビニール袋に入れて密封し、20℃にて7日間保存した。
Claims (19)
- 以下の条件(1)~(5)を満たす成分(A)を有効成分として含む、スポンジケーキ用改良剤。
(1)澱粉含量が75質量%以上
(2)アミロース含量5質量%以上である澱粉の低分子化澱粉を3質量%以上45質量%以下含み、前記低分子化澱粉のピーク分子量が3×103以上5×104以下
(3)25℃における冷水膨潤度が5以上20以下
(4)目開き0.25mmの篩の篩下の含有量が80質量%以上100質量%以下
(5)目開き0.5mmの篩の篩上の含有量が10質量%以下 - アミロース含量5質量%以上である前記澱粉が、アミロース含量が40質量%以上のコーンスターチである、請求項1に記載のスポンジケーキ用改良剤。
- 前記低分子化澱粉が、酸処理澱粉、酸化処理澱粉および酵素処理澱粉からなる群から選択される1種または2種以上である、請求項1または2に記載のスポンジケーキ用改良剤。
- 前記成分(A)が、前記低分子化澱粉以外の澱粉として、コーンスターチ、小麦澱粉、馬鈴薯澱粉、タピオカ澱粉および架橋澱粉からなる群から選択される1種または2種以上を含有する、請求項1乃至3いずれか1項に記載のスポンジケーキ用改良剤。
- 前記成分(A)の目開き0.25mmの篩の篩下かつ目開き0.075mmの篩の篩上の含有量が30質量%以上100質量%以下である、請求項1乃至4いずれか1項に記載のスポンジケーキ用改良剤。
- 前記成分(A)の目開き0.075mmの篩の篩下の含有量が50質量%以上100質量%以下である、請求項1乃至4いずれか1項に記載のスポンジケーキ用改良剤。
- 以下の条件(1)~(5)を満たす成分(A)と、前記成分(A)以外の粉体原料と、を含む、スポンジケーキ用生地。
(1)澱粉含量が75質量%以上
(2)アミロース含量5質量%以上である澱粉の低分子化澱粉を3質量%以上45質量%以下含み、前記低分子化澱粉のピーク分子量が3×103以上5×104以下
(3)25℃における冷水膨潤度が5以上20以下
(4)目開き0.25mmの篩の篩下の含有量が80質量%以上100質量%以下
(5)目開き0.5mmの篩の篩上の含有量が10質量%以下 - 当該スポンジケーキ用生地中の前記粉体原料および前記成分(A)の含有量の合計に対する前記成分(A)の含有量が、0.3質量%以上25質量%以下である、請求項7に記載のスポンジケーキ用生地。
- 前記粉体原料が、穀粉を含む、請求項7または8に記載のスポンジケーキ用生地。
- 以下の条件(1)~(5)を満たす成分(A)と、穀粉および糖類から選択される1種または2種と、を含む、スポンジケーキ用ミックス粉。
(1)澱粉含量が75質量%以上
(2)アミロース含量5質量%以上である澱粉の低分子化澱粉を3質量%以上45質量%以下含み、前記低分子化澱粉のピーク分子量が3×103以上5×104以下
(3)25℃における冷水膨潤度が5以上20以下
(4)目開き0.25mmの篩の篩下の含有量が80質量%以上100質量%以下
(5)目開き0.5mmの篩の篩上の含有量が10質量%以下 - 以下の条件(1)~(5)を満たす成分(A)と、前記成分(A)以外の粉体原料と、を含む、スポンジケーキ。
(1)澱粉含量が75質量%以上
(2)アミロース含量5質量%以上である澱粉の低分子化澱粉を3質量%以上45質量%以下含み、前記低分子化澱粉のピーク分子量が3×103以上5×104以下
(3)25℃における冷水膨潤度が5以上20以下
(4)目開き0.25mmの篩の篩下の含有量が80質量%以上100質量%以下
(5)目開き0.5mmの篩の篩上の含有量が10質量%以下 - 当該スポンジケーキ中の前記粉体原料および前記成分(A)の含有量の合計に対する前記成分(A)の含有量が、0.3質量%以上25質量%以下である、請求項11に記載のスポンジケーキ。
- 前記粉体原料が、穀粉を含む、請求項11または12に記載のスポンジケーキ。
- 以下の条件(1)~(5)を満たす成分(A)と、前記成分(A)以外の粉体原料と、を混合し生地を得る工程、および
前記生地を焼成する工程
を含む、スポンジケーキの製造方法。
(1)澱粉含量が75質量%以上
(2)アミロース含量5質量%以上である澱粉の低分子化澱粉を3質量%以上45質量%以下含み、前記低分子化澱粉のピーク分子量が3×103以上5×104以下
(3)25℃における冷水膨潤度が5以上20以下
(4)目開き0.25mmの篩の篩下の含有量が80質量%以上100質量%以下
(5)目開き0.5mmの篩の篩上の含有量が10質量%以下 - 請求項11乃至13いずれか1項に記載のスポンジケーキを準備する工程、および
前記スポンジケーキに、コーティングする工程
を含む、デコレーションケーキの製造方法。 - コーティングする前記工程の後、10℃以下の温度で保存する工程をさらに含む、請求項15に記載のデコレーションケーキの製造方法。
- スポンジケーキのパサつきを抑制する方法であって、以下の条件(1)~(5)を満たす成分(A)を前記スポンジケーキの生地に含有させることを含む、前記方法。
(1)澱粉含量が75質量%以上
(2)アミロース含量5質量%以上である澱粉の低分子化澱粉を3質量%以上45質量%以下含み、前記低分子化澱粉のピーク分子量が3×103以上5×104以下
(3)25℃における冷水膨潤度が5以上20以下
(4)目開き0.25mmの篩の篩下の含有量が80質量%以上100質量%以下
(5)目開き0.5mmの篩の篩上の含有量が10質量%以下 - 前記パサつきが、10℃以下の温度で生じる、請求項17に記載の前記方法。
- スポンジケーキにホイップクリームをコーティングしたデコレーションケーキのクリームとスポンジケーキの口どけのバランスを向上させる方法であって、以下の条件(1)~(5)を満たす成分(A)を前記スポンジケーキの生地に含有させることを含む、前記方法。
(1)澱粉含量が75質量%以上
(2)アミロース含量5質量%以上である澱粉の低分子化澱粉を3質量%以上45質量%以下含み、前記低分子化澱粉のピーク分子量が3×103以上5×104以下
(3)25℃における冷水膨潤度が5以上20以下
(4)目開き0.25mmの篩の篩下の含有量が80質量%以上100質量%以下
(5)目開き0.5mmの篩の篩上の含有量が10質量%以下
