- Conger eel is a saltwater fish belonging to the eel conger family, and its appearance is similar to eel, but unlike eel, it lives only in the sea. In Korea, they did not eat well because of the snake-like appearance, but began to eat under the influence of Japanese people who enjoyed conger eel during the Japanese colonial period. It is caught by low-rise trawling and catching fish rather than fishing, and 90% of the catch is caught in October-April. Skin is used to make leather products and is mainly eaten as sashimi or roasted.
- Conger eel is rich in vitamin A, which is not only good for the eyes and skin, but also has excellent antioxidant activity, and is rich in vitamin E, vitamin B2, inosinic acid, free amino acids, calcium, iron, and phosphorus. Known.
- conger eel has a sticky mucus, which is the same substance as mucin, well known as the mucus of snails.
- Mucin is a mucous substance secreted from the mucous membranes of living organisms, and is present in the pituitary gland, gastric mucosa, cartilage, saliva, blood, and runny nose of animals, and is contained in a large amount of skin such as snails, eel and loach.
- the chemical body of mucin is a type of glycoprotein, but contains various glycoproteins depending on the origin and type of mucus. Mucin is difficult to dissolve in water and neutral salt solution, and precipitates without dissolving in acid, but in alkaline, it becomes viscous liquid.
- the role of mucin is the lubrication and protection of biological functions. In the digestive organs, it acts as a lubricant for organ protection and digestive movement.
- mucin acts to prevent damage by pepsin and gastric acid. It is known that when mucin is added to the formula containing lacturose, which promotes the growth of bifidus bacteria, it is known that the synergy of lacturose increases mucin activity and improves stools. It also helps the absorption of amino acids and fats.
- the mucin secreted by the large intestine acts as a lubricant in the intestinal lumen so that foreign matter attached to the lumen smoothly falls off.
- mucin contains chondroitin, a natural compound such as collagen, elastin, and protein, which are related to the skin's structure formation, preventing moisture loss from external harsh environment, preventing dryness of the skin, and regenerating wounded skin quickly. It plays a role.
