Abstract

Изобретение относится к пищевой промышленности, в частности к кондитерской области, и может быть использовано при производстве шоколада. Технический результат заключается в обеспечении у шоколада иммуномодулирующих свойств, позволяющих использовать шоколад для профилактики сахарного диабета и избыточной массы тела. Состав для производства шоколада из кобыльего молока содержит следующие компоненты, масс.%: какао тертое 50,0-65,0 какао-масло 15,0-15,5 ягоды и/или фрукты сушеные измельченные 1,5-2,0 лецитин 0,3-0,4 ароматизатор ванильно-сливочный 0,06-0,08 ароматизатор «шоколад» 0,02-0,03 Е-триптофан 0,25-0,30 пантотеновая кислота 0,002-0,0025 сухие штаммы лактобактерий 0,01-0,02 ресвератрол 0,0015-0,0025 порошок бета-глюканов 0,001-0,0015 фукоидан 0,001-0,0015 витамин В6 0,001-0,0015 экстракт стевии 0,002-0,004 экстракт топинамбура 0,03-0,04 кобылье молоко сухое остальное
