Abstract

L'invention concerne un procédé de production d'un extrait de grains de café vert qui comprend une étape consistant à préparer un mélange solide-liquide par ajout d'eau à des grains de café vert et/ou des grains de café partiellement torréfiés, une étape consistant à chauffer le mélange solide-liquide à 85 à 140 °C pendant 5 à 12 heures dans un récipient hermétique qui est étanche à l'air et interdit toute fuite vers l'extérieur de constituants aromatiques volatils, et une étape consistant à séparer le mélange solide-liquide par un procédé de séparation solide-liquide à l'aide d'un filtre, ou analogue.
