Abstract
Se describe un proceso para la producción de partículas de café solubles y aromatizadas. El proceso comprende la incubación de un donador del aroma, tal como un café tostado, con un aceptador, tal como una esencia de café refinada. El aceptador puede añadirse a las partículas de café solubles antes o después de la incubación. La invención se refiere, además, a un proceso para la preparación de un producto de café instantáneo que comprende partículas de café solubles y aromatizadas. Así un aceite comestible de olor aceptable se somete a la transferencia del aroma desde los granos de café tostado, lo mismo antes de aplicarlo en las partículas de café solubles que después de hacerlo. La transferencia del aroma se realiza durante un tiempo de incubación de al menos un día, y la cantidad del aceite aromatizado en el café instantáneo es de 0.8 % en peso a 4.5 % en peso.
