Abstract
L'invention concerne des boissons prêtes à boire ("RTD") dont la texture et la sensation en bouche sont améliorées, ainsi qu'une mousse formée par agitation de la boisson. La composition de boisson comprend un composant de fruit à coque comportant une protéine de fruit à coque ; ainsi qu'un composant laitier comprenant une cellulose et une gomme gellane, cette composition de boisson étant caractérisé en ce que, lorsqu'on la secoue, elle forme de la mousse. L'invention concerne également des procédés de préparation de boissons RTD.
