Abstract
本発明は、収納した冷凍水産加工品の量を外部から視認できる透明度を有するプラスチック材料からなる容器に、冷凍水産加工品をポリ袋などで包装することなく直接収納して需要者に供給することを特徴とする冷凍保存用水産加工品の提供方法に関する。
Description
本発明は冷凍保存用水産加工品の提供方法に関する。さらに詳しく言えば、従来、冷凍水産加工品をポリ袋などの袋に収納し、その袋をさらに箱(化粧箱)などに2重に包装・収納して販売され、購入した需要者(利用者)がポリ袋などから冷凍水産加工品を取り出して別の保存用容器に移し替えて冷凍庫に保管・保存していた冷凍水産加工品を、袋などに入れることなく、販売用容器と冷凍保存用容器の両機能を兼ね、さらに内容量を目で確認できる容器に直に収納して需要者に供給する冷凍保存用水産加工品の提供方法に関する。
近年、冷凍保存技術としてセルアライブシステム(CAS)法(特許文献1)などが提案されている。CAS冷凍法によれば、水産加工品の鮮度と味(旨み)が長期間に亘って維持される。しかしながら、このように冷凍された水産加工品を容器に収納して流通供給する冷凍水保存用水産加工品の提供方法には改善すべき課題がある。
例えば、冷凍加工した業務用のホタテ貝柱(玉冷と通称されている。)は、通常、約1kgを収納用のポリ袋に入れ、それを化粧箱に入れた状態で販売され、利用者である料理店やスーパーの惣菜コーナーの刺身用として使われている。利用者は化粧箱からポリ袋を取り出し、さらに玉冷をポリ袋から取り出して別の容器に入れ替えて使用する。ポリ袋を取り出した化粧箱、及び玉冷を取り出したポリ袋は通常廃棄される。ポリ袋や化粧箱は保存には適さず、流通段階でしか使用されないからである。
ホタテ貝柱の利用者は冷凍保存用の金属製の容器(金属トレー)に移し替え、冷凍ストッカーで保存し、適宜解凍して使用する。
また、流通段階では収納箱単位の量をそのまま保存容器に移して利用するため、開封した量をできるだけ早く使い切ってしまわなければならない。さらに、保存容器は殆どが金属で不透明であるため、ストッカーに入れた状態の残量の確認が容易でないなどの問題がある。

しかしながら、冷凍水産加工品を取り扱う業者(当業者と略記する。)は、上記のような容器に慣れているため、容器の使い勝手等に関してあまり不満を感じていないのが実情である。
本発明は、当業者の上記の現状認識に一石を投じて、より使い勝手の良い、販売用と冷凍保存用との両容器の機能を兼ね、さらに内容量を目で確認できる容器に直に収納して冷凍保存用水産加工品を供給する方法を提供することを目的とする。

冷凍加工を施した水産物を、梱包材を使用せずに冷凍保存可能な透明または半透明のトレー型容器に収納して流通・提供することにより、利用者は梱包材の廃棄処理を要せずにそのまま冷凍庫に保存し解凍して使用することが可能となる。
さらにトレーを複数に分け1パック(1梱包)として提供することにより、流通段階の量に比べ少量ずつ利用することが可能となる。その際、流通段階の量目は従来と同じであるため、余計なコストを負担せずに購入可能となる。
また、容器の内容量を視認できる透明または半透明容器であるため、ストッカーに入れた状態で目視により残量を容易に確認できる。

本発明に係る冷凍保存用水産加工品の提供方法で使用する販売用兼冷凍保存用容器は、透明または半透明で内部の水産加工品の残量が外部から目視で確認できるプラスチック材料からなるものである。このような容器は、内部に入れた残量を外から視認できる透明度を有するプラスチック材料を成形して製造することができる。
このようなプラスチック材料は、透明ないし半透明容器に成形加工できる材料であり、特に限定されないが、ポリオレフィン、ポリアミド、ポリスチレン及びポリエステルの各系材料が挙げられる。ここで、「系材料」とは、主たる樹脂成分を挙げて記載する表現であり、主たる樹脂成分を50質量%を超えて含有する材料を意味し、主たる樹脂が100質量%のものをも含むものとする。このような樹脂材料の具体例としては、ポリエチレン(PE)、ポリプロピレン(PP)、ポリエチレンテフタレート(PET)、ポリスチレン(PS)などの公知の各系樹脂を挙げることができる。
本発明に係る冷凍保存用水産加工品の提供方法で使用する販売用兼冷凍保存用容器は、冷凍保存用の目的から耐寒用グレードの樹脂仕様で成形された容器であることがより好ましい。ここで、「耐寒用グレード」の樹脂とは、製造メーカーが耐寒用として推奨している樹脂のほか、樹脂の脆化温度が、例えば-5℃未満、好ましくは-10℃未満、さらに好ましくは-20℃未満の樹脂材料が挙げられる。ここで、脆化温度とは、プラスチック(樹脂)等を冷却した時、可塑性や延性を失い機械的衝撃に対する強度が低下して破壊されやすくなる温度であり、試験片の50%が破壊する温度を言う。好適に使用できる樹脂材料の脆化温度は、例えば、PE-70~-80℃、PP0~-20℃、ABS -20℃、ナイロン66-30~-50℃である。
スチレンのみの重合体で非晶性の無色透明の汎用ポリスチレン(GPPS)の脆化温度は0℃より高くて脆いが、ゴム成分を加えた耐衝撃性PS(HIPS)、スチレン・アクリルニトリル共重合体樹脂、アクリルニトリル・ブタジエン・スチレン(ABS)からなる樹脂にすると好適に用いることができる。
PETは、非晶質域が多くて結晶化による制限を受けにくく、ガラス転移温度Tgより低い温度でも脆くなることはない。

また、本発明に係る冷凍保存用水産加工品の提供方法で使用する販売用兼冷凍保存用容器としては、酸素透過性を低下させる目的で用いられるバリヤー性を有する樹脂からなる成形容器を使用することが好ましい。魚の鮮度劣化は、魚の種類によって差違があり、例えば赤身魚の方が鮮度劣化が早く、タイ等の白身魚の方が遅いことが知られているが、一般に血液や脂は酸素に触れることによって鮮度劣化が進行しやすいので、容器の樹脂材料には、(1)酸素バリヤー性の高い樹脂を使用し成形したもの、(2)ラミネート・多層成形したもの、または(3)有機または無機材料で表面コーティングしたものから選択することが好ましい。
また、本発明に係る冷凍保存用水産加工品の提供方法では、販売用兼冷凍保存用容器材料の選択のほか、冷凍状態においても魚の血液や脂が酸素に触れることを抑制するために、容器内に冷凍品を収納後、容器内の空気を抜き、窒素を封入して保存する包装処理を行うことが好ましい。このシステムは、例えば、MAP包装(Modified Atmosphere Packaging/ガス置換包装)と呼ばれ、窒素を充填することで気圧の変化なくパッケージすることができ、酸化を防ぐだけでなく旨味も保ちながらの長期保存が可能となる利点がある。
容器包装用の蓋部のフィルム材料としては、前記(1)~(3)のいずれかに記載の樹脂フィルムやその他公知の酸素バリヤー性の高い樹脂フィルムが採用される。
本発明で使用する容器では、前記樹脂のほか、さらにポリ塩化ビニリデン(PVDC)、エチレン-ビニルアルコール共重合体(EVOH)、メタキシリレンアジパミド(MXD6ナイロン)等からなる容器及び/または蓋部を使用しても良い。

容器の形状は特に限定されないが、直方体形状のトレーが好ましい。容器の大きさは、本発明に係る水産加工品を取り扱う業者(当業者)が、冷凍水産加工品を流通過程で販売・購入して、そのまま冷凍庫に保管・保存して利用するのに好都合な大きさである。具体的には、縦(直方体形状トレーの長辺)が80~380mm、横(直方体形状トレーの短辺)が80~265mm、高さが30~110mmの範囲内で所望の大きさのものを既存成形メーカーから入手できる。
トレーは複数が連結されたものでもよい。具体的には直方体上部の長辺及び/または短辺同士で連結された複数個連結型のトレーが挙げられる。具体例としては、長辺同士で2または3個連結されたもの、及び長辺及び短辺同士で4個が連結されたもの挙げられるが、これらに限定されるものではない。
複数個連結されたトレー容器の連結部では、樹脂の厚みを他の部分よりも小さくして凹み構造として、利用者がハサミ等の切断手段を用いることなく簡易に手で切断できる構造とすることが好ましい。また、蓋部の包装フィルムも連結部上で複数の凹み部を有する構造で接着することが好ましい。
長辺同士で2個連結された半透明のポリプロピレン材料からなる2個連結型トレー容器の写真を図1に示す。図2は図1のトレー容器にホタテ貝柱を入れた状態の写真であり、半透明容器の外部からホタテ貝柱の量が確認できる。
本発明の対象となる冷凍水産加工品は特に制限されず、加熱加工調理した冷凍品も含まれるが、本発明の提供方法が特に威力を発揮するのは生食可能な冷凍水産加工品であり、特に-30℃以下で冷凍保存することが好ましい、生食可能冷凍水産加工品である。このような冷凍水産加工品は特に限定されないが、例えば、ホタテ、カキ(牡蠣)などの貝類(殻つき及びむき身)、サンマ、サバ、アジ、イワシ、ヒラメ、タラ、サーモンなどの魚類(丸ごと及びフィレ)、タラコ、シラコ、ウニ、イクラなどの魚卵類、ワカメ、アカモク、メカブ(ワカメの根元部分)、ワカメ、アカモクなどの海藻類が挙げられる。これらの中でも、本出願人の所在地である宮城県牡鹿郡女川町女川港で養殖されているホタテの貝柱、水揚げ量が全国でも有数のサンマ、サバ、イワシなどの刺身用切り身(フィレ)、ワカメが好ましい。
対象となる水産加工物の冷凍方法は限定されないが、新鮮な魚介類を冷凍した場合にその旨みが長期間維持されるセルアライブシステム(CAS)法による冷凍が好ましい。

以下、本発明に係る水産加工品の提供・利用方法について、実施例、比較例を挙げて、さらに具体的に説明するとともに本発明による作用効果を例証する。これらの実施例は例示及び具体的説明のためのものであり、本発明はこれらの実施例に限定されない。
実施例1:
図1に示す半透明プラスチック材料からなる耐寒用PP(脆化温度-30℃)製の直方体トレー容器(縦;180mm、横;284mm、高さ;74mm、2個連結型容器)内に、CAS法による冷凍水産加工品である冷凍ホタテ貝柱を1kgずつ、オートマチック・トレーシーラーSEALPAC(登録商標)(中村産業(株)販売)を用いて上述の容器に直接収納し、空気下MAP包装(Modified Atmosphere Packaging)して、通常の冷凍輸送手段にて需要者に供給した。なお、MAP包装時の包装フィルムとして、3層構造のフィルム(ベースフィルム:PP系EP(脆化温度-18℃)、中間フィルム:PA(脆化温度-40℃)、トップフィルム:PET(脆化温度-40℃))を使用した。需要者は購入した冷凍水産加工品を容器ごとそのまま冷凍庫に保管し、あるいは2個連結型容器を受領後1ずつの容器に手で切断して2個の容器を独自に開封し適量を容器から取り出し販売用に店頭に陳列し、あるいは適量を調理に利用した。
利用者(顧客)の満足度をヒヤリングにより下記の3段階の基準で評価した。
◎:ストッカー内で残量が見やすく適量ずつ効率的に非常に使いやすい。
○:同使いやすい。
△:使いにくい。
その結果を表1に示す。

非CAS法冷凍(通常冷凍)で冷凍加工したホタテ貝柱1kgを収納用のポリ袋に入れ、それを化粧箱に入れ利用者に提供した。利用者は化粧箱からポリ袋を取り出し、ホタテ貝柱をポリ袋から取り出して別の保存用容器に移し替え、冷凍庫に保管、必要量に応じて適時取り出し、調理に使用した。ポリ袋や化粧箱は通常の方法で廃棄した。

その結果を表1に示す。
非CAS法冷凍(通常冷凍)で冷凍加工したホタテ貝柱1kgを収納用のポリ袋に入れ、それを化粧箱に入れ利用者に提供した。利用者は化粧箱からポリ袋を取り出し、ホタテ貝柱をポリ袋から取り出して別の保存用容器に移し替え、冷凍庫に保管、必要量に応じて適時取り出し、調理に使用した。ポリ袋や化粧箱は通常の方法で廃棄した。
利用者(顧客)の満足度をヒヤリングにより下記の3段階の基準で評価した。
◎:ストッカー内で残量が見やすく適量ずつ効率的に非常に使いやすい。
○:同使いやすい。
△:使いにくく、廃棄物が多い。
その結果を表1に示す。
比較例2:
比較例1における、1kgの冷凍ホタテ貝柱を、1kgのサンマに変えたこと以外は、比較例1と同様に実施し、表1に記載の評価を得た。

Claims (10)
- 収納した冷凍水産加工品の量を外部から視認できる透明度を有するプラスチック材料からなる容器に冷凍水産加工品を直接収納して需要者に供給し、前記冷凍水産加工品は冷凍庫に保存し解凍して使用するものであることを特徴とする冷凍保存用水産加工品の提供方法。
- 収納した冷凍水産加工品の量を外部から視認できる透明度を有し、耐寒用グレードのプラスチック材料からなる容器に冷凍水産加工品を直接収納して需要者に供給し、前記冷凍水産加工品は冷凍庫に保存し解凍して使用するものであることを特徴とする冷凍保存用水産加工品の提供方法。
- 収納した冷凍水産加工品の量を外部から視認できる透明度を有し、脆化温度が-5℃未満のプラスチック材料からなる容器に冷凍水産加工品を直接収納して需要者に供給し、前記冷凍水産加工品は冷凍庫に保存し解凍して使用するものであることを特徴とする冷凍保存用水産加工品の提供方法。
- 前記プラスチック材料からなる容器に冷凍水産加工品を直接収納し、ガス置換包装により窒素を充填して需要者に供給する請求項1~3のいずれかに記載の冷凍保存用水産加工品の提供方法。
- プラスチック材料が、ポリオレフィン、ポリアミド、及びポリエステル系材料から選ばれる請求項1~4のいずれかに記載の冷凍保存用水産加工品の提供方法。
- 容器がトレー型の構造を有する請求項1~5のいずれかに記載の冷凍保存用水産加工品の提供方法。
- トレーが、直方体上部の長辺及び/または短辺同士で連結された複数個連結型のトレーである請求項6に記載の冷凍保存用水産加工品の提供方法。
- トレーが2~4個連結型のトレーである請求項7に記載の冷凍保存用水産加工品の提供方法。
- 冷凍水産加工品が、ホタテ、カキ(牡蠣)、サンマ、サバ、アジ、イワシ、ヒラメ、タラ、サーモン、タラコ、シラコ、ウニ、イクラ、ワカメ、メカブ、アカモクから選択されるものである請求項1~8のいずれかに記載の冷凍保存用水産加工品の提供方法。
- 冷凍水産加工品がセルアライブシステム(CAS)冷凍技術により冷凍されたものである請求項1~9のいずれかに記載の冷凍保存用水産加工品の提供方法。
