Diese vorhandenen und/oder ermittelten Daten werden sodann eingesetzt um die Bewegung des Schleifmittels relativ zu der Schneidkontur zu steuern. Die Daten können nicht nur Informationen über die Lage der Schneidkontur aufweisen, sondern vorzugsweise auch Daten über den Lokal vorhandenen Schneidwinkel und/oder den Lokal vorhandenen Freiwinkel zu erhalten. Beim oder nach dem Schleifen kann die Schneidkontur erneut vermessen werden und die Daten in einem Datenspeicher, der sich beispielsweise an oder auf dem Messer befindet, beispielsweise ein RFID, hinterlegt werden. Die Daten können dann von einer Aufschneidevorrichtung ausgelesen werden, um das geschliffene Messer mit einer etwas veränderten Schneidkontur optimal auf der Aufschneidevorrichtung zu positionieren.
