- a conveyor belt conveys the concertina paper cases in succession towards a filling station wherein a dose of dough for panettone or other bakery foodstuff is introduced into each single paper case.
- the paper cases containing the dough are carried on a belt to a rising chamber where the final rising takes place.
- the paper cases coming out of the rising chamber are taken to a baking station comprising one or more ovens and, finally, to a cooling station.

- a first drawback lies in the fact that the paper cases currently known are kept stacked in rows in the storehouses .
- the purpose of the present invention is to avoid the aforementioned drawbacks and, in particular, to devise a process and a system for the line production of bakery foodstuff that allow reducing the size of the storehouses necessary to contain the baking molds.
- Another purpose of the present invention is to provide a process and a system for the line production of bakery foodstuff that allows reducing the production costs with respect to known processes and/or systems. These and other purposes according to the present invention are accomplished by making a process and a system for the line production of bakery foodstuff as outlined in the independent claims.

- Such a system 10 comprises a forming machine 40 that in turn comprises a loading station adapted to be fed with at least one stack of sheets 20 of deformable material; each sheet 20 of such a stack is, in particular, shaped and arranged to be deformed so as to make a baking mold like, for example, a paper case for panettone .
- the loading station is for example made through a loading plate whereonto the stacks of sheets are placed .
- the sheets of deformable material are a plurality of disks 20 of paper material.
- each disk 20 comprises a central portion having a circular section 21 and a lateral portion 22 that surrounds the central portion 21.
- the lateral portion 22 in turn comprises a plurality of folding lines 23 arranged in a substantially radial direction so as to define a plurality of foldable wedges 24.
- a layer of a gluing promoter or primer is placed onto the lateral portion 22.
- a hot glue layer can be placed onto each foldable wedge 24.
- the forming machine 40 comprises gripping means (not illustrated) provided for picking up a sheet 20 from the at least one stack of sheets and for transferring the sheet 20 picked up to the entry of a forming station (not illustrated) arranged to deform such a sheet 20 so as to make a corresponding baking mold 30.
- the gripping means can comprise at least one mechanical or pneumatic arm (not illustrated) that is provided at one end with a pincer element (not illustrated) to grip the sheet 20 arranged on top of the stack.
- the gripping means can comprise a suction element (not illustrated) capable of lifting the sheet 20 arranged on top of the stack by suction.
- the forming station comprises a forming mold (not illustrated) in which the sheet of deformable material 20 received from the gripping means is deformed .
- the forming mold comprises a mobile male element and a fixed female element.
- the male element penetrates into the female element deforming the sheet 20 giving it the shape of the baking mold.
- the forming station also comprises means for heating the forming mold .
- Such heating means preferably comprise a heater band that is positioned so as to wound the lateral surface of the forming mold and at least one thermostat for controlling the temperature of the mold provided with a temperature sensor that is positioned inside the mold.
- such heating means are capable of heating the forming mold at least up to the temperature triggering the gluing promoter or the temperature melting the hot glue placed on the deformable disk 20, for example 150°C.
- the disk 20 is deformed by the forming mold folding around the folding lines 23 so as to take up a substantially cylindrical shape.
- the production system 10 also comprises a filling station 16 arranged to place a dough into each of the baking molds 30 made and a baking station 17 arranged to perform the baking of the dough placed inside each of the baking molds in order to obtain the desired bakery foodstuff.
- the foodstuff can firstly be cooled in a cooling station 18 and then packaged for sale in a packaging station 19 in a per se known manner.
- the production system 10 can also comprise a rising station 25 arranged between the filling station 16 and the baking station 17 in which the dough placed inside the baking mold is risen for a predetermined time period that varies according to the type of dough used.
- the production system 10 can advantageously comprise a conveyor belt for conveying the baking mold through the aforementioned filling 16, rising 25, baking 17, cooling 18 and packaging 19 stations.
- the process for the line production of bakery foodstuff according to the present invention is as follows.
- Such a production process comprises the step in which a stack of sheets 20 of deformable material is arranged in the loading station of the forming machine 40.

- the step of making the baking mold 30 comprises the step in which the forming mold is heated at a temperature such as to trigger the gluing promoter or to melt the hot glue layer.
- the production process according to the present invention provides the formation of the baking mold directly in the production line. This implies that for the same amount of foodstuff you may have smaller storehouses with respect to the prior art.
- the bulk due to a stack of deformable sheets, indeed, is greatly less than that of a corresponding plurality of preformed baking molds.
- the stacks of deformable sheets are significantly more compact than the stacks of paper cases currently used; this allows transporting and holding an amount of sheets necessary for many hours of production close to the loading station.

Abstract
L'invention concerne un procédé pour la production à la chaîne de produits alimentaires de boulangerie comprenant les étapes suivantes : le placement d'un empilement de feuilles (20) d'un matériau déformable dans une station de chargement, chaque feuille (20) étant conformée et agencée pour être déformée de manière à réaliser un moule de cuisson (30) ; le transfert successif de chaque feuille (20) de l'empilement de feuilles vers une station de formation ; à la station de formation, la déformation de chaque feuille (20) de manière à réaliser un moule de cuisson (30) correspondant ; le placement, à l'intérieur de chacun des moules de cuisson (30) réalisé, d'une pâte pour les produits alimentaires de boulangerie souhaités à une station de remplissage (16) ; la réalisation de la cuisson de la pâte placée à l'intérieur de chacun des moules de cuisson (30) à une station de cuisson (17) afin d'obtenir les produits alimentaires de boulangerie souhaités.
