  • the forming station also comprises means for heating the forming mold .
  • Such heating means preferably comprise a heater band that is positioned so as to wound the lateral surface of the forming mold and at least one thermostat for controlling the temperature of the mold provided with a temperature sensor that is positioned inside the mold.
  • such heating means are capable of heating the forming mold at least up to the temperature triggering the gluing promoter or the temperature melting the hot glue placed on the deformable disk 20, for example 150°C.
  • the disk 20 is deformed by the forming mold folding around the folding lines 23 so as to take up a substantially cylindrical shape.
  • the production system 10 also comprises a filling station 16 arranged to place a dough into each of the baking molds 30 made and a baking station 17 arranged to perform the baking of the dough placed inside each of the baking molds in order to obtain the desired bakery foodstuff.
  • the foodstuff can firstly be cooled in a cooling station 18 and then packaged for sale in a packaging station 19 in a per se known manner.
  • the production system 10 can also comprise a rising station 25 arranged between the filling station 16 and the baking station 17 in which the dough placed inside the baking mold is risen for a predetermined time period that varies according to the type of dough used.
  • the production system 10 can advantageously comprise a conveyor belt for conveying the baking mold through the aforementioned filling 16, rising 25, baking 17, cooling 18 and packaging 19 stations.

  • the production process according to the present invention provides the formation of the baking mold directly in the production line. This implies that for the same amount of foodstuff you may have smaller storehouses with respect to the prior art.
  • the bulk due to a stack of deformable sheets, indeed, is greatly less than that of a corresponding plurality of preformed baking molds.
  • the stacks of deformable sheets are significantly more compact than the stacks of paper cases currently used; this allows transporting and holding an amount of sheets necessary for many hours of production close to the loading station.

Abstract

L'invention concerne un procédé pour la production à la chaîne de produits alimentaires de boulangerie comprenant les étapes suivantes : le placement d'un empilement de feuilles (20) d'un matériau déformable dans une station de chargement, chaque feuille (20) étant conformée et agencée pour être déformée de manière à réaliser un moule de cuisson (30) ; le transfert successif de chaque feuille (20) de l'empilement de feuilles vers une station de formation ; à la station de formation, la déformation de chaque feuille (20) de manière à réaliser un moule de cuisson (30) correspondant ; le placement, à l'intérieur de chacun des moules de cuisson (30) réalisé, d'une pâte pour les produits alimentaires de boulangerie souhaités à une station de remplissage (16) ; la réalisation de la cuisson de la pâte placée à l'intérieur de chacun des moules de cuisson (30) à une station de cuisson (17) afin d'obtenir les produits alimentaires de boulangerie souhaités.
