Definitions
- Device for supporting dough portions and an assembly for dough treatment comprising such a device
- the invention relates to a device for supporting dough portions, also called product carriers, particularly during proofing or baking of the dough portions.
- the invention further relates to an assembly for dough treatment, particularly for proofing or baking of dough portions.
- the United Kingdom patent application 2 304 546 describes a device for supporting dough during proofing and baking of French bread or baguettes.
- the device comprises a tray of corrugated metal with a silicon based non-stick coating, having an elongated grooved portions and a support frame.
- the tray is attached to the frame by rivets which can be released by drilling means for repair of a damaged grooved portion.
- Dough to be proved is shaped and laid in a groove which is U-shaped with a round base and steep sidewalls to ensure the proving product is retained in the desired shape.
- the frame includes upstanding side walls in the direction of travel on a conveyer belt, which are parallel to the longitudinal axis of the grooved portions. The sidewall prevents piling up of trays during collisions while on a conveyor belt.
- French patent application 2 572 891 describes a baking support for the baking of food products, such as dough pieces for making bread.
- the support comprises a baking tray consisting of a perforated metal sheet attached to two transverse rails.
- the support is characterised in that the transverse rails are connected to two longitudinal rails with which they form a frame which supports the baking tray.
- the cross- section of the longitudinal rails each have a shape of a "C", forming a longitudinal channel.
- the opening of the longitudinal channel of one longitudinal rails is arranged in a direction towards the opening of the channel of the other longitudinal rail.
- the transverse rails comprise a corner piece at each end thereof, wherein the corner pieces each have the form of a square whose main branch has a section of dimensions corresponding substantially to the internal dimensions of the "C"-shaped section so as to be engageable within the longitudinal rails.
- the known frame itself is rigid and has dimensions substantially equal to the dimensions of the cooking plate.
- the longitudinal and transverse rails of the frame are assembled by a snap connection between the corner piece of the transverse rails and the "C"-shaped sections of the longitudinal rails .
- each of the longitudinal rails there is engaged, and then clipped on top of the "C"-shaped sections, one of the longitudinal sides of the baking tray .
- the International Publication WO 00/78151 discloses a baking tray set comprising a rectangular frame formed by three different profiles and a number of baking trays with integrated or attached fastening means on the under side.
- the long and short sides of the frame are mode of a first profile provided with upper and lower channels.
- the sides are joined with corner elements of a second profile having legs in pair in each flange that are pushed into the upper and lower channels in the first profile. Pushing the pair of legs into the upper and lower channels provides a form fitting joint.
- Fixing of the corner elements to the long and short sides are made by riveting, welding or gluing the legs of the corner element to the long and short sides of the frame.
- the invention for that purpose provides a device for supporting dough portions comprising:
- a substantially rectangular frame comprising longitudinal and transverse members, wherein at each corner of the frame a longitudinal member is connected to a transverse member,
- the longitudinal member is connected to the transverse member by means of a form fitting joint and a welding, a pop rivet or a glue connection arranged at a distance from said form fitting joint.
- the form fitting joint comprises a joint between two pieces made by inserting a projecting member or tenon on one piece into a notch, hole, slot or mortise made in the other piece.
- the notch, hole, slot or mortise is arranged to receive a projecting member or tenon of substantially the same dimensions.
- the longitudinal members and the transverse members need to be held in a precise orientation with respect to each other during the welding of these members in order to obtain a proper rectangular frame. This process can be circumvented in the manufacturing of a frame as described in FR 2 572 891.
- the longitudinal and transverse members are connected to each other by a snap connection, which may come loose when such frames are used in large bread manufacturing facilities.
- the invention provides an alternative frame and method for manufacturing such a frame. Due to the form fitting joint, the longitudinal and transverse members can be pre-assembled and held together in the correct orientation by their own form fitting joints. The pre-assembled longitudinal and transverse members can then be welded to each other, substantially without any addition external orienting and/of holding devices, which makes the makes the assembling of the frame of the invention easy and quick.
- the longitudinal and transverse members can be glued together or coupled with pop rivets. Due to the from fitting or form locking joints the longitudinal and transverse members are held in place during the setting or hardening of the glue connection or during the application of the pop rivets, substantially without any addition external orienting and/of holding devices.
- the longitudinal members each comprises a bottom wall, an upright longitudinal outer sidewall, an upright longitudinal inner sidewall, and an upright transverse sidewall at each end of the longitudinal member, wherein at each end of the longitudinal member the upright longitudinal inner sidewall is provided with a recess arranged adjacent to the upright transverse sidewall, wherein an end part of a transverse member is arranged in the recess.
- the transverse members each comprises a substantially rectangular tube.
- the end part of the transverse member is connected to the upright longitudinal inner sidewall by means of a form fitting joint, and wherein the end part of the transverse member is connected to the upright longitudinal outer sidewall and/or to the upright transverse sidewall by means of the welding, pop rivet or glue connection.
