Abstract

Изобретение относится к производству кондитерских изделий с фигурным орнаментом или с одноцветным или многоцветным рельефным рисунком на одной из поверхностей изделия. Основная особенность настоящего изобретения заключается в том, что подготовленную шоколадную/шоколадоподобную массу подают в полноразмерную форму в диспергированном капельном состоянии через форсунку со скоростью капель, обеспечивающей их пластическую деформацию при их торможении. Это дает возможность точно регулировать количество кондитерской массы, подаваемой в форму, управляя перепадом давления на форсунке и временем подачи шоколадной через форсунку. Таким образом, нет необходимости предварительно отмеривать порцию кондитерской массы для формования декоративного рельефного элемента. При капельной подаче через форсунку шоколадная масса равномерно наносится на поверхность формы отдельными каплями достаточно малого объема, что способствует своевременному удалению воздуха из канавок рельефного узора на поверхности формы и тем самым повышается качество рельефного декоративного элемента и кондитерского изделия в целом. При равномерном нанесении массы можно формировать очень тонкий слой рельефного декоративного элемента, сопоставимый по толщине с печатанием. Техническим результатом использования предлагаемого изобретения является повышение качества кондитерских изделий с трехмерным рельефным декоративным рисунком.
