Abstract

La présente invention concerne un produit de l'érable, qui comprend un isomaltulose résultant de la conversion enzymatique d'un produit de départ tiré de l'érable, et qui présente un faible indice glycémique. L'invention concerne également un produit de l'érable comprenant un isomaltulose résultant de la conversion enzymatique d'un produit de départ tiré de l'érable, lequel produit de départ comprend un sucrose dans lequel l'isomaltulose résultant de la conversion enzymatique représente d'environ 20 % à environ 98 % du sucrose présent dans le produit de départ tiré de l'érable avant la conversion enzymatique. L'invention concerne aussi un procédé qui permet d'obtenir un produit de l'érable contenant un isomaltulose et qui consiste à convertir en isomaltulose par voie enzymatique du sucrose présent dans un produit de départ tiré de l'érable, cette conversion consistant à convertir en isomaltulose au moins 20 % à 98 % du sucrose présent dans le produit de départ tiré de l'érable.
