Abstract

Cette invention concerne : un procédé de production de 2R,4R-monatine à un bon rendement n'utilisant pas de matériau de départ onéreux tel que le D-Trp mais un matériau de départ bon marché, le L-Trp; et autres. Plus spécifiquement, cette invention concerne : un procédé de production de 2R,4R-monatine ou d'un sel de celle-ci, qui comprend les étapes (1) à (3) mentionnées ci-dessous; et autres. (1) Une étape de mise en contact du L-tryptophane avec une désaminase pour obtenir un acide indole-3-pyruvique; (2) Une étape de mise en contact de l'acide indole-3-pyruvique et d'acide pyruvique avec une aldolase pour obtenir 4R-IHOG; et (3) Une étape de mise en contact du 4R-IHOG avec une D-aminotransférase en présence d'un acide D-aminé pour obtenir la 2R,4R-monatine. Dans l'étape (3), il est préférable d'utiliser une D-aminotransférase n'ayant pas la capacité de produire du D-tryptophane à partir de l'acide indole-3-pyruvique ou chez laquelle cette capacité est réduite.
