Abstract

What are proposed are: a method for grinding meat, a meat separation method, a cutter assembly of a meat grinder, and two variants of a cutter pair of said cutter assembly. The preferred fields of use are meat, poultry or fish processing, and the manufacture of new-generation industrial meat grinders and of a self-sharpening cutter therefor. Meat is ground and separated using a cutter assembly of a meat grinder comprising a separator. Such a cutter assembly comprises a cutting and separating grating (8), a one-sided separating knife (9), a direct-flow chamber (15) and a peripheral annular continuous-flow chamber (16). The direct-flow chamber (15) is adjacent to the central annular zone of the cutting and separating grating (8) which occupies up to 90% of the area of the working surface thereof. The annular continuous-flow chamber (16) adjoins the remainder of this grating. When the proposed method is implemented, cuts of meat are ground into pieces by take-in and intermediate cutter pairs of the cutter assembly of the meat grinder, and the resultant fragments are pushed into the direct-flow chamber (15). Up to 90% of the meat fragments are passed reciprocally from said direct-flow chamber to the central part of the cutting and separating grating (8). The remainder of the fragments of meat are moved into the peripheral annular continuous-flow chamber (16), from where said fragments are passed reciprocally to the peripheral cutting and separating grating (8). The cutter pairs, which operate during passes of the blades of the separating knife (9), cut the muscle and fat tissue away from the fragments of meat and these tissue fragments are pushed into the openings in the cutting and separating grating. The majority of the connective-tissue impurities and tough extraneous matter introduced with the meat is separated in the central part of the cutting and separating grating (8), and the separation of the meat is completed by the peripheral part of said grating. The cutter assembly of the meat grinder is provided with cutter pairs comprising wearing parts of gratings (2), (5), (8) and, connected functionally thereto, wearing parts of knives (3), (4), (6), (7) and (9). The interacting surfaces of the cutter pairs are curvilinear in form. The technical result achieved consists in increasing the yield of ground meat, in increasing the water retention capacity thereof, in minimizing as far as possible the contamination of the ground meat with products from the wear of the cutter pairs, in minimizing as far as possible any heating of the ground meat, in the energy-saving nature of the meat grinding process, in the massaging, degasification and deaeration of the meat being ground, and in improving the taste and aroma of the food products produced from this meat.
