Description
本発明は、パン類や洋菓子類のデコレーションなどに使用する起泡性水中油型乳化物及びその製造方法に関する。
起泡性水中油型乳化物は、植物性脂肪だけからなる純植物性クリーム、乳脂肪だけからなるもの、植物性脂肪と乳脂肪の両方を含むコンパウンドクリームの3つに大別される。前記3つのタイプの起泡性水中油型乳化物のうち、乳脂肪単独の油脂を配合した起泡性水中油型乳化物は、風味の点で優れたものであるが、起泡(ホイップ)前(液状クリーム)の状態で、品温の上昇や輸送中の振動によって著しい粘度上昇や固化(通称“ボテ”と称せられる)が起こりやすく乳化安定性が悪い。また、乳脂肪単独の油脂を配合した起泡性水中油型乳化物は、起泡後に最適なホイップドクリームとなる終点の幅が狭く、またホイップドクリームの保形性も充分ではなく、乳脂肪は比較的高価な油脂であるから製品コストも高くなるという欠点がある。
しかしながら、市場の本物志向により、豊かな乳風味の食品が求められてきており、このような需要に対し、純植物性クリームやコンパウンドクリームにおいて、生クリーム、バター、全脂粉乳、脱脂粉乳等が使用されてきたが、特に、生クリームやバターは高価であり物性が不安定であるといった問題もある。また、フレーバーを使用すると、風味を強くすると自然な風味が損なわれる傾向があった。
一方、水中油型乳化物において、乳化粒子の大きさをコントロールして乳化安定性を高める検討がなされており、例えば、特許文献1では、油脂20~60重量%と無脂乳固形分2~10重量%と乳化剤0.1~5重量%と水とからなり、エマルジョン粒子が下記の粒子径分布:2μ以下のもの5~25%、2μより大きく4μ以下のもの50~90%、4μより大きく6μ以下のもの5~25%を有している起泡性水中油型乳化脂が記されているが、これは安定な起泡性を有する水中油型乳化脂に関するものであり、乳風味を向上させるものではなかった。
また、特許文献2では、粒度分布曲線が少なくとも2つの極大値を有する曲線で表されるものであることを特徴とする可塑性のある水中油型乳化食品が示されているが、これはマヨネーズ様食品であり、軽い食感を目的としたものであった。
さらに、特許文献3では、リン酸塩やクエン酸塩等の蛋白溶融塩、乳化剤及びpH調整剤等を使用せずに、ミセル状蛋白質を含有し、油滴のメジアン径が0.3~5.0μmで保存安定性に優れた水中油型乳化物を製造可能な方法が提案されているが、これは、乳化剤等の添加剤を使用することのできないフレッシュクリームにおいても、乳化剤等の添加なしに脂肪球の粒径をより小さくして、その保存安定性を向上させ、賞味期限の長いフレッシュクリームを製造できるというもので、乳風味の向上を目的としたものではなく、複数回の均質化処理を行うには設備付加が必要となる。
このように従来技術は、乳化粒子を細かくして乳化安定性を高めるもので、純植物性クリームやコンパウンドクリームの製品コストを上昇させず、特別な設備を付加せずとも、簡便に乳味感を向上させることができる方法はこれまで見出されていなかった。
本発明の目的は、製品コストを上昇させず、特別な設備も付加せずとも、ホイップした際の乳風味が向上した起泡性水中油型乳化物を提供することにある。
上記課題を解決するために、鋭意検討を行った結果、水相中に分散する油滴のエマルションの粒度分布のRelative Span Factor(R.S.F)に着眼し、R.S.F値を特定の範囲内にコントロールすることによって、ホイップした際の乳風味が向上することを見出し、本発明を完成させた。
すなわち本発明の第一は、油脂分15~49重量%、無脂乳固形分2~15重量%、及び水を含む水中油型乳化物において、水相中に分散する油滴のエマルションの粒度分布が次式で表される、Relative Span Factor(R.S.F):R.S.F=(D90-D10)/D50≧1.6であり、かつ2≧D50≧1を満たすことを特徴とする起泡性水中油型乳化物(ただし、D90は累積粒度分布の小粒子側からの累積90体積%、D10は累積10体積%、D50はメジアン径を表す。)である。
第二は、さらに乳脂を含有する、第一記載の起泡性水中油型乳化物である。
第三は、殺菌又は滅菌工程後、1回の均質化処理で製造することを特徴とする、第一又は第二記載の起泡性水中油型乳化物の製造方法である。
第四は、殺菌又は滅菌工程後の均質化処理中に少なくとも1回圧力を変える第三記載の起泡性水中油型乳化物の製造方法である。
第二は、さらに乳脂を含有する、第一記載の起泡性水中油型乳化物である。
第三は、殺菌又は滅菌工程後、1回の均質化処理で製造することを特徴とする、第一又は第二記載の起泡性水中油型乳化物の製造方法である。
第四は、殺菌又は滅菌工程後の均質化処理中に少なくとも1回圧力を変える第三記載の起泡性水中油型乳化物の製造方法である。
純植物性クリームやコンパウンドクリームの製品コストを上昇させずに、特別な設備を付加せずとも、ホイップした際の乳風味が向上した起泡性水中油型乳化物を得ることができる。
以下に本発明を詳細に説明する。
本発明の油脂としては、パーム油、ヤシ油、パーム核油、大豆油、菜種油、ひまわり種子油、綿実油、落花生油、米糠油、コーン油、サフラワー油、オリーブ油、カポック油、ゴマ油、月見草油等の植物性油脂ならびに牛脂、豚脂等の動物性油脂、中鎖脂肪酸トリグリセリドが例示でき、上記油脂類の単独または混合油あるいはそれらの硬化油、分別油、硬化分別油、分別硬化油ならびにエステル交換等を施した加工油脂が使用できる。
本発明の起泡性水中油型乳化物は、油脂分としては15~49重量%であり、好ましくは20~45重量%であり、更に25~42重量%が好ましい。油脂分が低すぎると起泡性が悪くホイップしにくくなり、高すぎると粘度が高くなり乳化安定性が悪くなる。
本発明の起泡性水中油型乳化物における、無脂乳固形分とは、牛乳の全固形分から乳脂肪分を差引いた成分をいい、生乳、牛乳、脱脂乳、生クリーム、濃縮乳、無糖練乳、加糖練乳、全脂粉乳、脱脂粉乳、バターミルクパウダー、ホエー蛋白、カゼイン、カゼインナトリウム等の乳由来の原料が例示でき、無脂乳固形分が2~15重量%が好ましく、さらに好ましくは3~12重量%、最も好ましくは4~10重量%である。無脂乳固形分が少ない場合は、起泡性水中油型乳化物の乳化安定性が悪くなり、乳味感も少なくなって風味が悪くなる。多い場合は、起泡性水中油型乳化物の粘度が高くなり、コストも高くなり、量に見合った効果が得難くなる。
本発明の起泡性水中油型乳化物は、乳味の強化のために当然ながら、更に乳脂を含有させることが好ましく、本発明での乳脂は、牛乳、生クリーム、バター等の乳由来の乳脂はもちろんのこと、これらの原料を加工処理して得られるバターオイルも含むものである。植物性油脂で乳味感を付与できるのが本発明の根幹であるが、乳脂を含有させることにより乳味感を強くすることができる。
本発明の起泡性水中油型乳化物においては、起泡性水中油型乳化物を調製する際に通常使用する乳化剤を適宜選択使用することが出来る。例えば、レシチン、モノグリセライド、ソルビタン脂肪酸エステル、プロピレングリコール脂肪酸エステル、ポリグリセリン脂肪酸エステル、ポリオキシエチレンソルビタン脂肪酸エステル、ショ糖脂肪酸エステル等の合成乳化剤が例示でき、これらの乳化剤の中から1種又は2種以上を選択して適宜使用することができる。
本発明の起泡性水中油型乳化物については、各種塩類を使用することが出来る。塩類としては、ヘキサメタリン酸塩、第2リン酸塩、クエン酸ナトリウム、ポリリン酸塩、重曹等を単独又は2種以上混合使用することが好ましい。その他所望により糖類、安定剤、香料、着色料、保存料等を使用することが出来る。
本発明の起泡性水中油型乳化物は、上記原料を含む水中油型乳化物において、水相中に分散する油滴のエマルションの粒度分布がR.S.F値≧1.6であることを特徴とする。

上式において、D90は、エマルションの粒度分布における累積粒度分布の小粒子側からの累積90体積%であり、D10は、エマルションの粒度分布における累積粒度分布の小粒子側からの累積10体積%である。また、D50は、エマルションの粒度分布における累積粒度分布の小粒子側からの累積50体積%であり、メジアン径に相当する。
上式において、D90は、エマルションの粒度分布における累積粒度分布の小粒子側からの累積90体積%であり、D10は、エマルションの粒度分布における累積粒度分布の小粒子側からの累積10体積%である。また、D50は、エマルションの粒度分布における累積粒度分布の小粒子側からの累積50体積%であり、メジアン径に相当する。
本発明の起泡性水中油型乳化物は、上記R.S.F値が1.6以上であることを特徴とし、これ未満では、水中油型乳化物の粒度分布が均一になってしまうため、乳味感が感じられにくくなってしまい、好ましくない。
さらに、本発明の起泡性水中油型乳化物は、D50で表されるメジアン径が1~2の範囲内であることを特徴とし、D50が1未満では、粒子径が小さすぎ、乳味が感じられにくくなり、2を超えると、水中油型乳化物としての乳化安定性が悪くなり、好ましくない。
本発明の起泡性水中油型乳化物の製造法としては、油脂分、無脂乳固形分、乳化剤及び水を主要原料とするこれらの原料を混合後、予備乳化、殺菌又は滅菌処理し均質化処理することにより得ることができるが、均質化処理の際に少なくとも1回は圧力を変更する。起泡性水中油型乳化物の保存性の点で滅菌処理することが好ましい。具体的には、各種原料を60~70℃で20分間予備乳化した後(乳化装置はホモミキサー)、必要により0~250Kg/cm2の条件下にて均質化(乳化装置は均質機)する。次いで超高温瞬間殺菌処理(UHT)した後、再度、0~300Kg/cm2の条件化で少なくとも1回は圧力を変更して均質化し、冷却後、約24時間エージングする。
均質化処理中の圧力の変更方法としては、少なくとも1回圧力を変更するものであれば特に制限されず、段階的に圧力を上げていく方法、段階的に圧力を下げていく方法、あるいは高い圧力から低い圧力へ切り替える、または低い圧力から高い圧力へ切り替える、あるいはこれらを複数回組み合わせるなど、いずれの方法でも良い。
超高温瞬間(UHT)殺菌には、間接加熱方式と直接加熱方式の2種類があり、間接加熱処理する装置としてはAPVプレート式UHT処理装置(APV株式会社製)、CP-UHT滅菌装置(クリマティー・パッケージ株式会社製)、ストルク・チューブラー型滅菌装置(ストルク株式会社製)、コンサーム掻取式UHT滅菌装置(テトラパック・アルファラベル株式会社製)等が例示できるが、特にこれらにこだわるものではない。また、直接加熱式滅菌装置としては、超高温滅菌装置(岩井機械工業(株)製)、ユーペリゼーション滅菌装置(テトラパック・アルファラバル株式会社製)、VTIS滅菌装置(テトラパック・アルファラバル株式会社製)、ラギアーUHT滅菌装置(ラギアー株式会社製)、パラリゼーター(パッシュ・アンド・シルケーボーグ株式会社製)等のUHT滅菌装置が例示でき、これらの何れの装置を使用してもよい。
本発明の起泡性水中油型乳化物は、オーバーランが40~150%が好ましく、より好ましくは60~140%、更により好ましくは60~120%である。オーバーランが高すぎる場合には食感が軽すぎたり、風味の乏しいものになる傾向がある。オーバーランが低すぎる場合には食感が重たくなりすぎ、良好な風味、口溶け感が得難くなる。
以下に本発明の実施例を示し本発明をより詳細に説明する。なお、例中、%及び部は、いずれも重量基準を意味する。また、添加剤の添加順序或いは油相を水相へ又は水相を油相へ加える等の乳化順序が以下の例示によって限定されるものではないことは言うまでもない。
結果については以下の方法で評価した。
(起泡性水中油型乳化物の評価方法)
起泡性水中油型乳化物のホイップタイム、オーバーラン、乳味感を以下の方法で評価した。また、水相中に分散する油滴のエマルションの粒度分布は、レーザ回折式粒度分布測定装置(島津製作所株式会社製 SALD-7100)を用いて測定した。
*ホイップタイム:起泡性水中油型乳化物1kgにグラニュー糖80g加えてホバートミキサー(HOBART CORPORATION製 MODEL N-5)3速(300rpm)にてホイップし、最適起泡状態に達するまでの時間を測定した。
*オーバーラン:[(一定容積の水中油型乳化物重量)-(一定容積の起泡後の起泡物重量)]÷(一定容積の起泡後の起泡物重量)×100
*起泡物の風味を乳味感で評価。専門パネル10名により評価、平均化し、小数点以下を四捨五入した値を結果とした。

パーム核硬化油5部、ヤシ油20部、菜種パーム混合硬化油5部にレシチン0.25部、グリセリン脂肪酸エステル0.15部を添加混合融解し油相とする。これとは別に水64.69部に脱脂粉乳4.5部、ショ糖脂肪酸エステル(HLB5)0.22部、重曹0.02部、メタリン酸ナトリウム0.15部、キサンタンガム0.01部、グアガム0.01部を溶解し水相を調整する。上記油相と水相を70℃で15分間ホモミキサーで攪拌し予備乳化した後、超高温滅菌装置(岩井機械工業(株)製)によって、144℃において4秒間の直接加熱方式による滅菌処理を行った後、一定時間50Kg/cm2の均質化圧力で均質化した後、さらに一定時間10Kg/cm2の均質化圧力に切り替え、直ちに5℃に冷却した。冷却後約24時間エージングして、起泡性水中油型乳化物を得た。得られた起泡性水中油型乳化物のD10は0.68、D90は3.03、R.S.Fは1.62、D50は1.45であった。この起泡性水中油型乳化物を上記の方法に従って評価したところ、滅菌処理後30Kg/cm2の一定の均質化圧力で均質化して作製した比較例1より乳味感を強く感じた。
パーム油中融点部5部、ヤシ油20部、菜種パーム混合硬化油10部にレシチン0.25部、グリセリン脂肪酸エステル0.05部を添加混合融解し油相とする。これとは別に水59.79部に脱脂粉乳4.5部、ショ糖脂肪酸エステル(HLB5)0.22部、重曹0.02部、メタリン酸ナトリウム0.15部、キサンタンガム0.01部、グアガム0.01部を溶解し水相を調整する。上記油相と水相を70℃で15分間ホモミキサーで攪拌し予備乳化した後、超高温滅菌装置(岩井機械工業(株)製)によって、144℃において4秒間の直接加熱方式による滅菌処理を行った後、一定時間50Kg/cm2の均質化圧力で均質化した後、さらに一定時間10Kg/cm2の均質化圧力に切り替え、直ちに5℃に冷却した。冷却後約24時間エージングして、起泡性水中油型乳化物を得た。得られた起泡性水中油型乳化物のD10は0.67、D90は3.57、R.S.Fは1.95、D50は1.49であった。この起泡性水中油型乳化物を上記の方法に従って評価したところ、滅菌処理後30Kg/cm2の一定の均質化圧力で均質化して作製した比較例2より乳味感を強く感じた。
パーム油中融点部5部、ヤシ油20部、菜種パーム混合硬化油10部にレシチン0.25部、グリセリン脂肪酸エステル0.05部を添加混合融解し油相とする。これとは別に水59.79部に脱脂粉乳4.5部、ショ糖脂肪酸エステル(HLB5)0.22部、重曹0.02部、メタリン酸ナトリウム0.15部、キサンタンガム0.01部、グアガム0.01部を溶解し水相を調整する。上記油相と水相を70℃で15分間ホモミキサーで攪拌し予備乳化した後、超高温滅菌装置(岩井機械工業(株)製)によって、144℃において4秒間の直接加熱方式による滅菌処理を行った後、一定時間60Kg/cm2の均質化圧力で均質化した後、一定時間30Kg/cm2の均質化圧力に切り替えて均質化し、さらに一定時間10Kg/cm2の均質化圧力に切り替え、直ちに5℃に冷却した。冷却後約24時間エージングして、起泡性水中油型乳化物を得た。得られた起泡性水中油型乳化物のD10は0.50、D90は3.45、R.S.Fは1.97、D50は1.50であった。この起泡性水中油型乳化物を上記の方法に従って評価したところ、滅菌処理後30Kg/cm2の一定の均質化圧力で均質化して作製した比較例2より乳味感を強く感じた。
菜種パーム混合硬化油42部にレシチン0.25部を添加混合融解し油相とする。これとは別に水51.86部に脱脂粉乳5.5部、ショ糖脂肪酸エステル(HLB5)0.22部、重曹0.02部、メタリン酸ナトリウム0.15部を溶解し水相を調整する。上記油相と水相を70℃で15分間ホモミキサーで攪拌し予備乳化した後、超高温滅菌装置(岩井機械工業(株)製)によって、144℃において4秒間の直接加熱方式による滅菌処理を行った後、一定時間50Kg/cm2の均質化圧力で均質化した後、さらに一定時間10Kg/cm2の均質化圧力に切り替え、直ちに5℃に冷却した。冷却後約24時間エージングして、起泡性水中油型乳化物を得た。得られた起泡性水中油型乳化物のD10は0.65、D90は3.20、R.S.Fは1.72、D50は1.48であった。この起泡性水中油型乳化物を上記の方法に従って評価したところ、滅菌処理後30Kg/cm2の一定の均質化圧力で均質化して作製した比較例3より乳味感を強く感じた。
パーム核硬化油5部、ヤシ油10部、菜種パーム混合硬化油5部、バターオイル20部にレシチン0.25部、グリセリン脂肪酸エステル0.05部を添加混合融解し油相とする。これとは別に水54.8部に脱脂粉乳4.5部、ショ糖脂肪酸エステル(HLB5)0.22部、重曹0.02部、メタリン酸ナトリウム0.15部、キサンタンガム0.005部、グアガム0.005部を溶解し水相を調整する。上記油相と水相を70℃で15分間ホモミキサーで攪拌し予備乳化した後、超高温滅菌装置(岩井機械工業(株)製)によって、144℃において4秒間の直接加熱方式による滅菌処理を行った後、一定時間50Kg/cm2の均質化圧力で均質化した後、さらに一定時間10Kg/cm2の均質化圧力に切り替え、直ちに5℃に冷却した。冷却後約24時間エージングして、起泡性水中油型乳化物を得た。得られた起泡性水中油型乳化物のD10は0.72、D90は3.90、R.S.Fは1.78、D50は1.79であった。この起泡性水中油型乳化物を上記の方法に従って評価したところ、滅菌処理後30Kg/cm2の一定の均質化圧力で均質化して作製した比較例4より乳味感を強く感じた。

滅菌処理後30Kg/cm2の一定の均質化圧力で均質化する以外は、実施例1と同様の配合、製法で作製した。得られた起泡性水中油型乳化物のD10は0.73、D90は2.47、R.S.Fは1.23、D50は1.42であった。

本発明は、パン類や洋菓子類のデコレーションなどに使用する起泡性水中油型乳化物及びその製造方法に関するものである。
Claims (4)
- 油脂分15~49重量%、無脂乳固形分2~15重量%、及び水を含む水中油型乳化物において、水相中に分散する油滴のエマルションの粒度分布が次式で表される、Relative Span Factor(R.S.F):R.S.F=(D90-D10)/D50≧1.6であり、かつ2≧D50≧1を満たすことを特徴とする起泡性水中油型乳化物。
(ただし、D90は累積粒度分布の小粒子側からの累積90体積%、D10は累積10体積%、D50はメジアン径を表す。) - さらに乳脂を含有する、請求項1記載の起泡性水中油型乳化物。
- 殺菌又は滅菌工程後、1回の均質化処理で製造することを特徴とする、請求項1又は2記載の起泡性水中油型乳化物の製造方法。
- 殺菌又は滅菌工程後の均質化処理中に少なくとも1回圧力を変える請求項3記載の起泡性水中油型乳化物の製造方法。
