Abstract

 急速冷凍以外の方法で食品の冷凍品質を高める方法である過冷却冷凍を、簡単な構成で実現すること。また、高品質冷凍を簡単な構成で実現できる冷蔵庫および冷凍保存方法を得ることである。  冷却器3が発する冷気を利用して食品を保存し貯蔵する冷蔵庫であって、貯蔵した食品をその凍結点以下の温度でも凍らない過冷却状態に少なくとも一定時間保持する過冷却ケース81を備える。過冷却ケース81は、例えば、複数の温度帯に切替可能な切替室200に配した上下2段式の下側ケースにより構成する。
