Abstract

(課題) 食品、加工食品またはその加工食品の原料の組織構造、特に加工食品、その中でも二次加工食品あるいはその製造原料の組織構造の鮮明な画像を形成することが出来る技術を提供すること。また、食品、加工食品またはその加工食品の原料の澱粉、蛋白質および脂質の存在形態を明確に判別することが出来る程度に鮮明な画像を形成する技術を提供すること。 (解決手段) 食品、加工食品または加工食品の製造原料をトリフェニルメタン骨格を有する蛍光染色剤単独あるいは混合物で染色した後、励起光を照射した後の蛍光を、少なくとも下記三種の観察光を含む三種以上の観察光に基づく情報から画像を得る。 380nm以上450nm未満の蛍光波長A、 450nm以上560nm未満の蛍光波長B、および 560nm以上700nm以下の蛍光波長C。
