Abstract

La présente invention relève de l'industrie alimentaire, et concerne en particulier des substances aromatisantes utilisées pour donner une saveur désirée à des aliments et à des boissons. L'invention a trait à l'utilisation, en tant qu'agent d'amertume alimentaire, de 2-(2-oxo-4-phénylpyrrolidin-1-yl)acétamide, représenté par la formule (I), ainsi qu'à un aliment et à une boisson contenant ledit composé. L'invention se rapporte également à un procédé permettant de donner une saveur amère à un aliment ou à une boisson, qui consiste à introduire, dans la composition dudit aliment ou de ladite boisson, du 2-(2-oxo-4-phénylpyrrolidin-1-yl)acétamide.
