Abstract
Vorgeschlagen werden Biopolymere mit einem Proteingehalt von maximal 1 % m/m und einem Calciumgehalt von maximal 1 % m/m, die dadurch erhältlich sind, dass man chitinhaltige Ausgangsstoffe in Gegenwart von biologisch abbaubaren Komplexbildern und Proteasen demineralisiert und deproteiniert und ein Verfahren zu deren Herstellung. Das Verfahren zeichnet sich durch Abfalleinsparung über Verwertung aller Schalenprodukte und des Komplexbildners aus.
Description
Biopolymere und ihre Herstellung mit Koppelproduktgewinnung
Gebiet der Erfindung
Die Erfindung befindet sich auf dem Gebiet der Biopolymere und betrifft Biopolymere mit einem Proteingehalt von maximal 1% m/m und einem Calciumgehalt von maximal 1% m/m und ein Verfahren zu ihrer Herstellung aus chitinhaltigen Ausgangsstoffen in Gegenwart von biologisch abbaubaren Komplexbildnern und Proteasen. Die dabei anfallenden Beiprodukte können als Wertstoffe Protein, Farbpigment und Calcium in Tierfutter weiterverwendet werden.
Stand der Technik
Chitin (Poly ß-(1-4)-N-acetyl-D-glucosamine) ist das nach Cellulose weltweit am häufigsten vorkommende natürliche Biopolymer. Es stellt den Hauptanteil der Gerüstsubstanz von marinen Krustentieren, Insekten und Pilzen dar und hat als Vorprodukt von Chitosan, seiner deacetylierten Form, in den letzten zwei Jahrzehnten beachtlich an Bedeutung gewonnen. Seit dem Einsatz von Chitosan und seinen Derivaten in kosmetischen, medizinischen Anwendungen, in der Papierindustrie, Biotechnologie, im Lebensmittelbereich, zur Abwasserreinigung oder auch Saatgutveredlung besteht Bedarf an großtechnischen, umweltschonenden und rentablen Herstellungsmethoden. Neben der guten ökologischen Verträglichkeit neuer Verfahren steht eine bessere Ausnutzung der entstehenden Beiprodukte im Vordergrund. Die älteste und häufigste Methode der Chitingewinnung beinhaltet die Zerkleinerung von Crustaceen-Abfällen, Deminerali- sierung durch Salzsäure, Deproteinierung durch Natronlauge und anschließende Waschschritte [Rigby G.W.; US-Patentschrift 1 040 879]. Das reine Chitin wird dann durch Deacetylierung mit konzentrierter Natronlauge zu Chitosan umgesetzt.
Durch die beschriebenen Verfahren der Chitinherstellung sind die Abwässer der Prozesse hoch mit Salz und organischen, sauerstoffzehrenden Substanzen belastet. Wertvolle Beiprodukte der Chitinherstellung wie Proteinhydrolysat und Astaxanthin, der rote Farbstoff der Crustaceen, wurden nicht weiterverarbeitet. Der Wertstoff „Farbpigment" in den Krabbenschalen wird durch die übliche Aufarbeitung stark abgebaut oder kann unter wirtschaftlichen Gesichtspunkten nicht mehr isoliert werden.
Schonendere Wege der Deproteinierung bei der Chitinherstellung wurden durch den Einsatz von proteolytischen Enzymen besch ritten.
Joensen, J.O. beschreibt in der Patentanmeldung WO8606082 A1 die Behandlung von chitinhaltigen. Ausgangsmaterial mit sauren Proteasen aus Fischinnereien. Dabei findet die Deproteinierung
durch die Proteasen der Innereien und die Demineralisierung durch den Zusatz einer anorganischen Säure statt. Astaxanthin wird isoliert durch anschließende Extraktion mit Ölen. Dieses Verfahren isoliert als einziges beschriebenes Verfahren sowohl Chitin, als auch Astaxanthin und Proteinhydrolysat. Es hat allerdings die Nachteile, daß Calcium als unlösliches Sulfat ausfällt und abgetrennt werden muß, Proteinhydrolysat und Astaxanthin in getrennten Phasen vorliegen und die sauren Bedingungen zu einer partiellen Hydrolyse von Chitin führen.
Diesen Nachteil zu umgehen, wurden in einem anderen Verfahren neutrale Proteasen (Actinase) zur Deproteinierung eingesetzt. Zur Demineralisierung diente in diesem Beispiel EDTA [Santoso et al., Tokyo Nogyo Daigaku Nogaku Shuho 1993]. Diese Methode erlaubte jedoch keine Isolierung von Proteinhydrolysat oder Astaxanthin, das gelöste Calcium wird nicht genutzt, da EDTA weder als Futterzusatz verwendbar noch biologisch abbaubar ist.
Die bessere ökologische Verträglichkeit versuchten Bustos und Healy [Chitin World 1994, S. 15 - 25] durch den Einsatz von proteinabbauenden Bakterienkulturen zu erreichen. Dazu zählten zum einen Proteaseexkretierende Stämme, zum anderen wurden Milchsäurebakterien eingesetzt [ Rao et al. in Adv. in Chitin Science, 1997], Häufig fand jedoch eine Proteinentfernung durch diese Methoden nur partiell statt, oder die sauren Bedingungen führten zu einer teilweisen Chitin-Polymerspaltung. Die nachträgliche notwendige Abtrennung der Mikroorganismen stellte ein neues Problem dar. Eine Isolierung von löslichem Calcium und Astaxanthin wurde nicht beschrieben.
Die Aufgabe der vorliegenden Erfindung hat somit darin bestanden, Biopolymere von hoher Reinheit zur Verfügung zu stellen, die sich für die Weiterverarbeitung zu hochmolekularen Chitosan mit guten filmbildenden Eigenschaften eignen. Dieses soll jedoch durch einen umweltschonenden Herstellungsprozess ermöglicht werden, der die Nutzung der anfallenden Haupt- und Beiprodukte ermöglicht. Der Prozess soll neben der ausreichenden Aufreinigung des Rohchitins die Abtrennung von Protein oder abgebautem Protein von dem unlöslichen Chitin und die Solubilisierung und Isolierung des Pigments aus den Krabbenschalen ohne nennenswerte Zerstörung erlauben. Eine bessere Verwertung der Beiprodukte soll auch durch die Überführung von mineralischem unlöslichem Kalk in lösliches biologisch verwertbares Calcium gegeben sein. Trotzdem soll die Qualität des gewonnenen Chitins nicht unter den ökologischen Gesichtspunkten leiden. Es galt also, eine wirtschaftliche Balance zu finden zwischen der ausreichenden Reinigung des Rohchitins, der Minimierung der Säure, Auswahl einer biologisch verwertbaren Säure , des Reinigungsmittels und einer integrierten Ausarbeitung der weiteren Wertstoffe Protein, Calcium, und Pigment.
Beschreibung der Erfindung
Gegenstand der Erfindung sind Biopolymere mit einem Proteingehalt von maximal 1% m/m und einem Calciumgehalt von maximal 1% m/m, dadurch erhältlich, daß man chitinhaltige Ausgangsstoffe in Gegenwart von biologisch abbaubaren Komplexbildnern und Proteasen demineralisiert und deproteiniert. Ein weiterer Gegenstand der Erfindung ist ein Verfahren zur Herstellung von Biopolymeren mit einem Proteingehalt von maximal 1 % m/m und einem Calciumgehalt von maximal 1% m/m, bei dem man chitinhaltige Ausgangsstoffe in Gegenwart von biologisch abbaubaren Komplexbildnern und Proteasen demineralisiert und deproteiniert und das Wertprodukt von dem Calcium und Proteinhydrolysat enthaltenden Beiprodukt abtrennt. Ebenfalls Gegenstand der Erfindung ist die Verwendung der Biopolymere zur Herstellung von Chitosan und/oder Chitosanderi- vaten, sowie die Verwendung der in dem Verfahren anfallenden Beiprodukte als Tierfutter.
In dem erfmdungsgemäßen Verfahren gelang es, alle Parameter zu kombinieren, so daß unter ökonomischen Gesichtspunkten weniger Rohstoffe zur Reinigung eingesetzt werden als im derzeit technischen Prozeß, der mit den Chemikalien Salzsäure und Natronlauge gefahren wird. Überraschenderweise wurde gefunden, daß die Deproteinierung und Demineralisation unter neutralen bis alkalischen Bedingungen die Chitinspaltung vermeidet, so daß aus diesem Vorprodukt hochmolekulares Chitosan mit guten filmbildenden Eigenschaften durch Deacetylierung hergestellt werden kann. Die nach dem Verfahren aus chitinhaltigem Ausgangsmaterial hergestellten Biopolymere weisen in Bezug auf den Restgehalt an Calcium und Proteinen neben der geringen hydrolytischen Zersetzung eine hohe Reinheit auf. Die Proteinentfernung mit Proteasen ermöglicht einen Proteinrestgehalt von maximal 1 % m/m. Die Calciumentfemung ist mit dem ausgewählten Komplexbildner aus gemahlenen Schalen annähernd vollständig möglich, mit ganzen Schalen bleiben Rest-Calciumgehalte von maximal 1 % m/m.
Der bei der Chitingewinnung eingesetzte Komplexbildner ist im Gegensatz zu anderen Komplexbildnern (z.B. EDTA) als Futtermitteladditiv einsetzbar. Er braucht im Prozeß nicht abgetrennt zu werden und erhöht den Nährwert des Futtermitteladditivs. Der rote Farbstoff Astaxanthin kann unter obigen neutralen bis alkalischen Bedingungen annähernd quantitativ isoliert werden. Ein weiterer Vorteil des erfindungsgemäßen Verfahrens ist die Tatsache, daß Calcium nach der Chitingewinnung in löslicher Form als Citrat vorliegt und als Tierfuttermittel zum Beispiel bei Fischen den Knochenaufbau (Lachse) und Schalenaufbau (Shrimps) schnell wachsender Zuchttiere positiv unterstützen kann. Das als Beiprodukt zusammen mit Calciumcitrat und Astaxanthin anfallende Proteinhydrolysat dient ebenfalls als Nahrungsquelle. Somit wird neben der Gewinnung eines qualitativ hochwertigen Biopolymers zur Chitosanherstellung eine Abfalleinsparung über Verwertung aller Schalenprodukte und des Komplexbildners mit dem erfindungsgemäßen Verfahren ermöglicht.
Das beschriebene Verfahren soll vorwiegend bei der Gewinnung von Chitin aus Krustentieren eingesetzt werden, was jedoch die Verwendung bei anderen Ausgangsstoffen wie Insekten oder Pilzen nicht einschränken soll.
Das chitinhaltige Ausgangsmaterial wird dabei mit dem bioabbaubaren Komplexbildner und einer Protease versetzt und unter definierten Temperaturen und eingestelltem pH-Wert über mehrere Stunden gerührt. Der Überstand bestehend aus Proteinhydrolysat, gelöstem Calcium, Komplexbildner und Astaxanthin wird danach abdekantiert, der feste Rückstand (die Schalen) mit Wasser gewaschen und erneut mit Komplexbildner und Protease versetzt. Der Vorgang kann beliebig oft wiederholt werden, bis die gewünschte Reinheit des Biopolymeres erreicht ist. Das erfindungsgemäße Verfahren kann auch zusätzlich mit herkömmlichen Methoden kombiniert werden. Eine nach der enzymatischen Reaktion anschließende Behandlung mit Mineralsäuren und Alkalilaugen wie zum Beispiel Salzsäure und Natronlauge ist dabei denkbar. Durch das gemischt enzymatisch- chemische Verfahren können trotz einer Verringerung der Umweltbelastung deutlich über 99% sowohl des Proteins als auch des Calciums aus dem Krustentierabfall entfernt werden.
Zur Demineralisierung des Ausgangsmaterials werden Komplexbildner eingesetzt, die biologisch abbaubar sind und eine hohe Umweltverträglichkeit aufweisen. Sie sind somit sogar als Futterbestandteil ohne vorherige Abtrennung einsetzbar. Dabei sind Citrate, insbesondere Natriumeitrat das bevorzugte Agens zur Demineralisierung.
Die Komplexbildner können direkt in situ durch Einsatz von Säuren und Laugen, im hervorgehobenen Fall Citronensäure und Natronlauge, hergestellt werden. Dabei finden Konzentrationen von 25 bis 500 mM, vorzugsweise 50 bis 200 mM Natriumeitrat bezogen auf das Gesamtvolumen Anwendung.
Zur enzymatischen Deproteinierung sollen Proteasen eingesetzt werden, die ihr Optimum im neutralen bis alkalischen Bereich haben. Sie ermöglichen eine schonende Behandlung des Chitins, unter Vermeidung einer hydrolytischen Spaltung, so daß ein hochmolekulares Biopolymer als Ausgangssubstanz für hochmolekulares Chitosan mit guten filmbildenden Eigenschaften zur Verfügung steht. Mögliche Proteasen sind Chymotrypsin, Trypsin, Chymopapain, Papain, Thermoly- sin, Alcalase, Nagarse, Proteinase A, Proteinase K, Metalloendopeptidase, Endoproteinase, Kal- likrein, Ficin, Elastase, Collagenase, Clostripain, Calpain oder aus Bakterien isolierte Proteasen mit einem pH-Optimum im neutralen bis basischen Bereich. Protease-Cocktails, das heißt Mischungen von mehreren Proteasetypen mit unterschiedlichen pH-Optima, sind ebenfalls zur Deproteinierung einsetzbar. Besonders bevorzugt aufgrund ihres guten Leistungs/Einsatzmengen-Verhältnisses sind Proteasen vom Subtilisin-Typ. Je nach Proteasetyp und Reaktionszeiten werden die Enzyme eingesetzt im Enzym/Schalen-Gewichtsverhältnis von 0,1 :100 bis 5:100. Subtilisin findet Anwendung im Enzym/Schalen-Gewichtsverhältnis von 0,1 :100 bis 3:100, vorzugsweise 0,2:100 bis 0,5:100.
Der pH-Wert, bei dem die Deproteinierung abläuft, ist dem Reaktionsoptimum des jeweiligen Enzyms anzupassen. Im Falle von Subtilisin soll der pH-Bereich der Reaktion auf pH-Werte von pH 7 bis 11 , vorzugsweise pH 9,0 bis 10 eingestellt werden. Auch die Reaktionstemperatur muß im ersten Schritt dem Temperaturoptimum des Enzyms angepasst werden. Der Gesamtprozess findet bei Temperaturen im Bereich von 20 bis 100°C statt, wobei für den ersten Schritt Temperaturen von 20 bis 50°C bevorzugt werden, während weitere Schritte, wie zum Beispiel Waschschritte wiederum bei höheren Temperaturen ablaufen können.
Beispiele
Versuch 1 :
Untersuchung der demineralisierenden Eigenschaften von Citrat
Demineralisierung von Shrimpschalen und Shrimppulver mit Citrat im schwach alkalischen Millieu unter gleichzeitiger Deproteinierung mit Savinase
Ansatz 1 :
100 g Shrimp Peeling-Abfall wurden mit 1000 ml 100 mM Na-Citrat eingestellt auf pH 9,1
(Lösung wurde in situ aus Citronensäure und NaOH hergestellt).
0,5 ml 5 Gew.%ige Subtilisin-Lösung wurden zugefügt.
Der Ansatz wurde 16 h bei 45 °C gerührt, der Überstand wurde abdekantiert und die
Schalen wurden gründlich mit Wasser gewaschen.
Die Schalen (Roh-Chitin) wurden erneut inkubiert, mit 500 ml 100 mM Na-Citrat eingestellt auf pH 9,1. (Lösung wurde in situ aus Citronensäure und NaOH hergestellt)
0,25 ml 5 Gew.%ige Subtilisin-Lösung wurden zugefügt.
Der Ansatz wurde 63 h bei 30 °C gerührt, der Überstand wurde abdekantiert und
Schalen wurden gründlich mit Wasser und Ethanol gewaschen.
Das Chitin wurde gefriergetrocknet
Ansatz 2:
50 g getrocknetes und gemahlenes Pulver aus Shrimp Peeling-Abfall wurden analog zu Ansatz 1 aufgearbeitet.

Deproteinierung von Shrimpschalen mit Subtilisin im schwach alkalischen Millieu unter gleichzeitiger Demineralisierung mit Citrat
Ansatz 3:
200 g Shrimp Peeling-Abfall wurden mit 1000 ml 50 mM Na-Citrat eingestellt auf pH 9,5 (Lösung wurde in situ aus Citronensäure und NaOH hergestellt) 0,5 ml 5 Gew.%ige Subtilisin-Lösung wurde zugefügt.
Der Ansatz wurde 4 h bei 50 °C gerührt, der Überstand abdekantiert und die Schalen wurden gründlich mit Wasser und einmal mit 100 mM HCI gewaschen.
Die Behandlung der Schalen wurde zweimal wie oben beschrieben wiederholt.

Nach der dritten Inkubation wurde für 1 h mit heißem Wasser (80 °C) gewaschen, Das Chitin wurde gefriergetrocknet

Fazit: Die alkalische Protease vom Typ Subtilisin ist gut geeignet zur Deproteinierung von Shrimp Peeling-Abfall.
Vergleiche mit Literaturdaten zur Deproteinierung von Shrimp-Schalen mit anderen Proteasen zeigen, daß alkalische Proteasen vom Subtilin-Typ ein sehr gutes Leistungs/Einsatzmenge-Ver- hältnis haben (Tabelle 3). Andere Autoren (Takeda & Abe, 1962; Takeda & Katsura, 1964) erzielten mit verschiedenen anderen Proteasen lediglich Rest-Protein Gehalte im Chitin von 5 % bei > 60 h Reaktionszeit.

Gemischt Enzymatisch-Chemischer Ansatz zur Deproteinierung und Demineralisierung von
Shrimp Peeling-Abfall
Ansatz 5:
50 g Shrimp Peeling-Abfall wurden mit 100 ml Wasser und 3 g Na-Citrat versetzt und der pH-Wert eingestellt auf pH 9,5.
0,1 ml 5 Gew.%ige Subtilisin-Lösung wurden zugefügt.
Der Ansatz wurde 14 h bei 45 °C gerührt, der Überstand wurde abdekantiert, und die
Schalen wurden gründlich mit Wasser gewaschen
Roh-Chitin wurde mit 100 ml 4 Gew.% NaOH versetzt, der Ansatz wurde 2 h bei 80 °C gerührt, der Überstand wurde abdekantiert, und die Schalen wurden gründlich mit Wasser gewaschen
Roh-Chitin wurde mit 100 ml 3 Gew.% HCI versetzt, der Ansatz wurde 3 h bei Raumtemperatur gerührt, der Überstand wurde abdekantiert, und die Schalen wurden einmal gründlich bei 80 °C für 1 h mit Wasser gewaschen. Das Chitin wurde gefriergetrocknet.

Mit der gemischt chemisch und enzymatischen Behandlung können deutlich über 99 % sowohl von Protein als auch Calcium aus dem Shrimp Peeling-Abfall entfernt wurden.
Versuch 4:
Isolierung von Proteinhydrolysat, rotem Krabbenfarbstoff, Citrat und löslichem Calcium aus enzymatischem Deproteinierungs und Demineralisierungs Überstand von Shrimp Peeling- Abfall.
Ansatz 6 (analog zu Schritt 1 aus Ansatz 5):
50 g Shrimp Peeling-Abfall wurden mit 100 ml Wasser und 3 g Na-Citrat versetzt und der pH-Wert eingestellt auf pH 9,5. 0,1 ml 5 Gew.%ige Subtilisin-Lösung wurden zugefügt.
Der Ansatz wurde 14 h bei 45 °C gerührt, der Überstand wurde abdekantiert. Der Überstand wurde komplett gefriergetrocknet.
Ergebnis:

Fazit: In Relation zum gewonnenen Chitin (durchschnittlich etwa 4 %/Feuchtgewicht Shrimp Peeling-Abfall) läßt sich ein 6facher Überschuß pulverförmiger Wertstoff gewinnen, der reich an partiell hydrolysiertem Protein, Citrat und Calcium ist. Der gewonnene rote Farbstoff entspricht in der Größenordnung den Literaturangaben zum Astaxanthin-Gehalt in Shrimp Peeling-Abfall von der Gattung Pandalus Borealis (230 ppm auf getrocknetes Produkt, Joensen & Villadsen, In Chitin World 1994).
Extrahiertes Calcium entspricht etwa 65 % des maximal extrahierbarem Calcium. Mit höheren Cit- rat-Konzentrationen konnten auch höhere Werte gelösten Calciums erzielt wurden (~ 0,9 g = 7,5 %).
Versuch 5:
Herstellung von Chitosan aus enzymatisch hergestelltem Chitin durch chemische Deacety- lierung. Qualitative Untersuchung der produzierten Chitosane im Vergleich zu chemisch hergestelltem Chitosan.
Ansatz 7:
200 mg getrocknetes und gemahlenes Chitin aus Ansatz 1 wurden mit
10 ml 50 % NaOH versetzt und 4 h unter Rühren und Rückfluß gekocht.
Der Überstand wurde abdekantiert und das Chitosan gewaschen bis das Waschwasser neutral wurde.
Ansatz 8:
200 mg getrocknetes und gemahlenes Chitin aus Ansatz 3 wurden mit
10 ml 50 % NaOH versetzt und 4 h unter Rühren und Rückfluß gekocht.
Der Überstand wurde abdekantiert und das Chitosan gewaschen bis das Waschwasser neutral wurde.
Ansatz 9:
200 mg getrocknetes und gemahlenes Chitin aus Ansatz 4 wurden mit
10 ml 50 % NaOH versetzt und 4 h unter Rühren und Rückfluß gekocht.
Der Überstand wurde abdekantiert und das Chitosan gewaschen bis das Waschwasser neutral wurde.
Ansatz 10:
200 mg getrocknetes und gemahlenes Chitin aus Ansatz 5 wurden mit 10 ml 50 % NaOH versetzt und 4 h unter Rühren und Rückfluß gekocht.
Der Überstand wurde abdekantiert und das Chitosan gewaschen bis das Waschwasser neutral wurde.
Ansatz 11:
200 g Shrimp Peeling-Abfall wurden mit 350 ml 4 % HCI versetzt. Der Ansatz wurde 14 h bei
4 °C gerührt, der Überstand wurde abdekantiert, und die Schalen wurden gründlich mit
Wasser gewaschen.
Das Roh-Chitin wurde mit 350 ml 4,5 % NaOH versetzt. Der Ansatz wurde 2 h bei 80 °C gerührt, der Überstand wurde abdekantiert und die Schalen wurden gründlich mit Wasser gewaschen.
Das Roh-Chitin wurde mit 350 ml 2 % HCI versetzt und der Ansatz wurde 3 h bei Raumtemperatur gerührt. Der Überstand wurde abdekantiert, und die Schalen wurden gründlich bei 80 °C für 1 h mit Wasser gewaschen. Das Chitin wurde gefriergetrocknet.
200 mg getrocknetes und gemahlenes Chitin wurden mit10 ml 50 % NaOH 4 h unter Rühren und Rückfluß gekocht. Der Überstand wurde abdekantiert und das Chitosan gewaschen bis das Waschwasser neutral wurde.
Ergebnis:
Gewerbliche Anwendbarkeit
Da die Deproteinierung und Demineralisierung nach dem erfindungsgemäßen Verfahren eine Chitinspaltung verhindert, bietet das nach dieser Methode hergestellte Chitin einen hochwertiges Vorprodukt für die Herstellung von hochmolekularem Chitosan mit guten filmbildenden Eigenschaften.
Verwendung findet das Chitosan zur Herstellung von kosmetischen und/oder pharmazeutischen Mitteln, wie beispielsweise Haut- oder Haar- Pflegemitteln, Hautrepairstoffen und Wundheilmitteln, in denen sie in Mengen von 0,01 bis 10 Gew.%, vorzugsweise 0,1 bis 1 ,5 Gew.-% - bezogen auf die Mittel - enthalten sein können.
Das weiterhin bei der Chitinherstellung gewonnene Proteinhydrolysat findet wie auch das Astaxanthin und gelöstes Calcium Verwendung als Futtermittelzusatz, insbesondere als Fischfutter.
Claims
1. Biopolymere mit einem Proteingehalt von maximal 1% m/m und einem Calciumgehalt von maximal 1% m/m, dadurch erhältlich, daß man chitinhaltige Ausgangsstoffe in Gegenwart von biologisch abbaubaren Komplexbildnern und Proteasen demineralisiert und deproteiniert.
2. Verfahren zur Herstellung von Biopolymeren mit einem Proteingehalt von maximal 1% m/m und einem Calciumgehalt von maximal 1% m/m, bei dem man chitinhaltige Ausgangsstoffe in Gegenwart von biologisch abbaubaren Komplexbildnern und Proteasen demineralisiert und deproteiniert und das Wertprodukt von dem Calcium und Proteinhydrolysat enthaltenden Beiprodukt abtrennt.
3. Verfahren nach Anspruch 2, dadurch gekennzeichnet, daß man Citrate als Komplexbildner zur Demineralisierung einsetzt.
4. Verfahren nach den Ansprüchen 2 und 3, dadurch gekennzeichnet, daß man als chitinhalti- ges Ausgangsmaterial Schalen von Krustentieren einsetzt.
5. Verfahren nach den Ansprüchen 2 bis 4, dadurch gekennzeichnet, daß man zur enzymatischen Deproteinierung neutrale und/oder alkalische Proteasen einsetzt.
6. Verfahren nach den Ansprüchen 2 bis 5, dadurch gekennzeichnet, daß man die enzymati- sche Deproteinierung bei einem pH-Wert von 7 bis 11 durchführt.
7. Verfahren nach den Ansprüchen 2 bis 6, dadurch gekennzeichnet, daß man die Deproteinierung und Demineralisierung bei Temperaturen im Bereich von 20 bis 100°C durchführt.
8. Verfahren nach den Ansprüchen 2 bis 7, dadurch gekennzeichnet, daß das im Beiprodukt enthaltene Calcium in gelöster Form vorliegt.
9. Verwendung der bei dem Verfahren nach Anspruch 2 anfallenden Beiprodukte als Tierfuttermittel.
10. Verwendung der Biopolymere nach Anspruch 1 zur Herstellung von Chitosan und/oder Chito- sanderivaten.
