Abstract

La présente invention concerne un procédé permettant de changer, de modifier et donc d'améliorer les qualités perçues des produits comestibles, et notamment leur goût, leur odeur, et la sensation en bouche. A cet effet, on ajoute une quantité suffisante d'une matière polymère polyphénolique. Les produits comestibles concernés sont les produits laitiers, les boissons alcoolisées, les boissons non alcoolisées aux fruits, les condiments, les confiseries, les en-cas salés, et les potages. Les produits polymères de l'invention sont tirés du produit végétal brut, pépins de raison ou avoine, par un traitement utilisant des solvants aqueux et donnant un extrait brut qui, après une autre opération de séparation et de traitement, aboutit à des matières polymères polyphénoliques telles que les polyproanthocyanidines.
